Mexican Eggroll Recipe

Darcy asked, so here y'all go. You can make these as spicy as you want, or don't want.

1 package of wonton wrappers (I call them eggrolls, but they aren't, really. :D)
1 can refried beans
1/2 - 3/4 pound ground beef, cooked and drained
1 package shredded cheese

Mix the cooked beef, beans and cheese in a bowl. best to do this while the meat is still hot, then the cheese melts a bit. You can season the beef as desired. If you want yours a little spicier, you can add diced jalepenos to the beef mixture.

Heat oil to 350 degrees. Scoop a teaspoon of your beef mixture into a wonton wrapper. Wet the edges of the square and fold it up like an envelope. It's hard to explain but basically you put the stuff in the center, fold up the bottom, fold in the sides and then fold the top triangle down. It should look like a tiny envelope when you are done. I have tried these as purses, and it doesn't turn out as well for some reason. Make sure ALL your edges are sealed and there are no tears in your wrapper. I usually make them all up at once and store them on a cookie sheet covered in a damp towel. Then I fry them up 6 or so at a time. You can serve hot or warm, whatever. Jeff eats his dipped in salsa, I just eat them plain. They're addictive, just a warning. :)
 
For those of us who do NOT do refried beans (or pretty much any beans), would rice work as a good filler do ya think?
 
Hmmm.....when you cook them in the oil, is it in like a fry daddy? Cuz I want to make them, but I don't have a fryer to cook them in. :(

I've done it both ways, Col. I've done it in a fry daddy and I've done it in a deep pan with oil. It will work in the pan, just use tongs. And a splatter guard. I am scared of oil, so generally I use the fry daddy or I make Jeff fry them. :D
 
I will try them in the pan then. Can you get the wonton stuff at a regular grocery?

If you have a deep sided pan, that will be just fine.

And our wontons are in the fruit/veg area, in a refrigerated case (around these parts, it's separate from the regular refrigerated section)

I wonder if you can spray them with pam or olive oil and bake them to make them "healthier"....

Our wonton wrappers are in the bagged salad area in our grocery store too!

I make something very similar to those. I use the same recipe but I pop the wrappers in a mini muffin tin- just push them in so they make a bowl. Cook them at 400 degrees for about 4 minutes so they keep their shape. Fill with meat mixture and then bake until golden.

You can make the meat mixture any flavor/cuisine you want.

I think I will try them both :) I'm always looking for new ways to eat beef. Jordan would eat beef 7 days a week if I allowed it, lol.

I think you probably can!! They probably won't be as crispy, but I don't know why that wouldn't work. :)
