Darcy asked, so here y'all go. You can make these as spicy as you want, or don't want.
1 package of wonton wrappers (I call them eggrolls, but they aren't, really.
)
1 can refried beans
1/2 - 3/4 pound ground beef, cooked and drained
1 package shredded cheese
Mix the cooked beef, beans and cheese in a bowl. best to do this while the meat is still hot, then the cheese melts a bit. You can season the beef as desired. If you want yours a little spicier, you can add diced jalepenos to the beef mixture.
Heat oil to 350 degrees. Scoop a teaspoon of your beef mixture into a wonton wrapper. Wet the edges of the square and fold it up like an envelope. It's hard to explain but basically you put the stuff in the center, fold up the bottom, fold in the sides and then fold the top triangle down. It should look like a tiny envelope when you are done. I have tried these as purses, and it doesn't turn out as well for some reason. Make sure ALL your edges are sealed and there are no tears in your wrapper. I usually make them all up at once and store them on a cookie sheet covered in a damp towel. Then I fry them up 6 or so at a time. You can serve hot or warm, whatever. Jeff eats his dipped in salsa, I just eat them plain. They're addictive, just a warning.
