My all time favourite quick meal is :

Wholemeal Pasta..
Some diced bacon fried in a little olive oil until it's browned then add a chopped clove of garlic and 2 diced courgettes (zuchini). Cook for a minute or 2 then add it to the pasta with a big dollop of creme fraiche and a handful of grated cheese, mix it all up and you have a basic carbonara served with salad it's super yummy.

OR

Cous cous, (add a little vegtable stock for flavour) with diced chicken and mixed vegtables (roasted or cooked in olive oil). Add a dash of soy sauce too mmmm, and sweet chilli sauce on the side even better!

upside down pizza - brown 1 1b ground beef, an onion and some garlic. Drain. Throw in a bottle of spaghetti sauce, stick in a cake pan. Cover with crescent roll dough (pinch so you make a crust) Bake for 1/2 hour. Kid pleasing easy dinner.

We really don't do many casseroles here, but a super fave of my dh and my boys is parmesan baked chicken.

I buy italian seasoned bread crumbs
grated parmesan cheese (shredded or finer is fine)
salt and pepper

dip boneless/skinless chicken breasts or thighs into milk and then into the bread crumb/parmesan mixture. Put in single layer on baking dish, drizzle melted butter (I use about 1/3 cube for a full pan) over the top, and bake at 350 for approx 1 hour uncovered. Serve with rice/potatoes and salad or veggie. We make this at least once every two weeks. Another favorite of my boys is just cut up chicken breasts or thighs (raw), pour Sweet Baby Rays (or favorite bbq sauce) over till covered, and bake covered till done. Serve with rice. This is great for when I have to go to work...and I can have it ready for my dh to throw into the oven. Both very easy, and they eat all of it!

New Orleans Barbequed Shrimp


INGREDIENTS
1 pound shrimp, heads off and unpeeled
1/2 cup butter
1/2 cup zesty Italian dressing
1 tablespoon lemon juice
2 teaspoons ground black pepper
1/8 teaspoon garlic powder
Crusty bread!

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Wash shrimp and drain well.
Melt margarine/butter in a one quart casserole dish. Add salad dressing, lemon juice, black pepper and garlic powder.
Add shrimp to the casserole dish. Stir gently to cover the shrimp with the mixture. Cover and bake, stirring occasionally for 25 to 30 minutes or until shrimp are pink.
Serve the shrimp hot on a large platter and place the sauce in individual bowls so that you can easily 'dunk' bread in the sauce!
 
I make stuffed chicken rolls a cople times a month, they are pretty easy & offer the bonus of working out your aggressions.

Take some chicken breasts and one at a time put them in a gallon baggie or between some wax paper. Get a heavy bottomed pan (I use an iron skillet) and whack each breast until it's flat and of even thickness. I find 4-5 whacks per chicken is good.

Mix up in a bowl some bread crumbs, some decent melting cheese (mozzerella, provelone, meunster, brie), some defrosted & drained frozen spinach and if you like olives or artichokes chop some of them up fine and add them, plus and egg and mix. Put a heaping tablespoon or two on each breast, roll it up and secure with tooth picks. Heat a tablespoon of oil up in a medium high skillet, brown the chicken all over (about 5 minutes) then cover the skillet, turn the heat down to medium low and cook for 7-9 minutes.

Serve with salad and random vegetable.
 
Cut chicken breasts into strips, then put sour cream on them and roll them in crushed cheezits... and bake. Sounds weird but yummy! My son loves them.
 
I like to make Beef Teriyaki but I substitute 1/2 the broccoli for carrots, and once it's done, I chop up the beef, broccoli and carrots really small for my little ones who hate veggies, and they don't even realize they're eating them because they're so small. :)

I also make Chicken & Dumplings in the slow cooker that are yum. I'll link you up when I find the recipe.
