I make stuffed chicken rolls a cople times a month, they are pretty easy & offer the bonus of working out your aggressions.
Take some chicken breasts and one at a time put them in a gallon baggie or between some wax paper. Get a heavy bottomed pan (I use an iron skillet) and whack each breast until it's flat and of even thickness. I find 4-5 whacks per chicken is good.
Mix up in a bowl some bread crumbs, some decent melting cheese (mozzerella, provelone, meunster, brie), some defrosted & drained frozen spinach and if you like olives or artichokes chop some of them up fine and add them, plus and egg and mix. Put a heaping tablespoon or two on each breast, roll it up and secure with tooth picks. Heat a tablespoon of oil up in a medium high skillet, brown the chicken all over (about 5 minutes) then cover the skillet, turn the heat down to medium low and cook for 7-9 minutes.
Serve with salad and random vegetable.
