I made a batch of Special Buttercream Frosting tonight. SO yummy. I believe in Crisco shortening now.
I did tweak the recipe a little based on the reviews. First off, I only made half a batch b/c the idea of using 8 cups of powdered sugar kinda freaks me out. Anyway halving the recipe made a perfect amount for my batch of 24 cupcakes.
I also used half unsalted butter (1/2 cup) and half shortening (1/2 cup), real vanilla extract (I'm thinking the clear imitation stuff is to keep the frosting white white but I don't care about that), and half and half (b/c I didn't have heavy cream).
So, I'm halfway to cupcake nirvana. The cupcake recipe I tried today was just okay. But that totally could be my fault. i think I overbeat the batter.
Anyway, if you find yourself with 6lbs of Crisco shortening, here's one way to use some.
