What's for supper?

I made Chile Verde... it's soooo easy and sooo good - especially if you like spicy food.

Here's my recipe in case you're interested:

2 lbs. pork tenderloin, diced
2 tbsp. chili powder
2 tbsp. cumin
salt & pepper to taste
1 large can green enchilada sauce
1 large can diced green chiles
shredded pepperjack cheese
flour (or corn) tortillas

Dice pork, sprinkle on chili powder, cumin, cayenne, salt & pepper. Mix well. Refrigerate for an hour (if you have the time). Brown meat in a little olive oil in a large pot. Once browned, add can of enchilada sauce and can of green chiles. Simmer until meat is tender. Spoon into a bowl, top with shredded pepperjack cheese and serve with flour tortillas. YUM-O!!!

I forgot to add the Cayenne. Be careful if you don't like it hot. I add about a 1/2 tsp. to mine.

All this talk of spaghetti. Now I know what we are having tomorrow night. And I'm definately going to have to try that Chili Verde. Sounds very yummy and I think I even have a pork tenderloin in the freezer that I need to use.
 
Im making one of those turkey breast roasts for tonight. Its my fiancee's last dinner at home before he goes back out to work for 2 weeks so Im making him something yummy.

We had farfalle pasta and spinich pesto with pureed eggplant. I'm one of those moms who puts pureed veggies in her kids food because they won't eat the veggies otherwise. Pureed eggplant they like, eggplant in chunks is yuck.
 
LOL I can't even remember what we had last night!

Tonight is lasagne for me (because no one else likes it...weirdos), and the kids and Tony are having sweet n sour meatballs and rice.
 
We were traveling last night so we just had fast food but tonight we are having Burritos Made Easy!!

1 lb ground lean beef
1/4 cup chopped onions
1 can (15 osz) chili with beans
1 1/4 cup chunky salsa
1/4 cup chopped green chilies
8 flour totillas (8inches), warmed
8 slices process Amarican cheese (Velveeta)
Taco sauce and Shredded lettuce, optional

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in chili, salsa and chilies. Bring to a boil. Reduce heat;simmer uncovered for 5 minutes.
Spoon about 1/2 cupful beef mixture off center on each totilla. Top each with a slice of cheese; roll up. Serve with taco sauce and lettuce if desired. YEILDS 8 burritos.
 
I didn't eat dinner last night, I don't think. I had a banana split though. LOL

Um, no idea tonight. Jeff's working again.
