I made Chile Verde... it's soooo easy and sooo good - especially if you like spicy food.
Here's my recipe in case you're interested:
2 lbs. pork tenderloin, diced
2 tbsp. chili powder
2 tbsp. cumin
salt & pepper to taste
1 large can green enchilada sauce
1 large can diced green chiles
shredded pepperjack cheese
flour (or corn) tortillas
Dice pork, sprinkle on chili powder, cumin, salt & pepper. Mix well. Refrigerate for an hour (if you have the time). Brown meat in a little olive oil in a large pot. Once browned, add can of enchilada sauce and can of green chiles. Simmer until meat is tender. Spoon into a bowl, top with shredded pepperjack cheese and serve with flour tortillas. YUM-O!!!
