What's For Dinner?

So what is everyone planning for dinner tonight?

While it seems too hot out still to have this, my daughter requested it so we're having:
Meatloaf (for DH and DD 1)
Steak (for me and DD 2)
Oven roasted potatoes
Grilled zuchini and peppers
Strawberries with Basil and Mint


Tomorrow night I'm thinking Pesto Chicken
and for Friday - Boneless Pork Chops (just not sure how I'm going to prepare them)

What's cooking at your house today?
 
We are having Vegetarian Mexican Egg Rolls and tossed salad.

What is in the egg rolls Marie? Sounds delish!


Homemade pizza on Indian naan bread.

I never thought of using Naan for pizza - I bet that is good. DH would see it and immediately want Indian food.
 
hmmm... I think left over brats from last night... and pair it with a large salad.

Then I have some beef stew meat at the butcher yesterday... so am thinking of strongraff in the crock pot... so that will probably be tomorrow's dinner.

We saw it on Food Network a few years ago (Aarti used it to win Next Food Network Star) and we've been making it ever since. At first we stuck close to her recipe, but now we've branched out and used all sorts of toppings of our own.
 
At Dh's request, we're having roast. He even picked it up at the grocery store, so I have no excuse. LOL

I'm going to serve it with baby carrots, mashed potatoes and a simple salad.
 
Enchiladas tonight, well the lazy kind that's more like lasagna. I've been making them for friends who need dinners, so DH said he wanted some for us this time.
 
Our freezer accidentally started defrosting when the door was left open for hours, so I had to cook the turkey breast that was in there. So DH and the kids are having turkey, corn on the cob, and cantaloupe. I'm having a big salad topped with feta crumbles and tofu baked with BBQ sauce.

We kind of wing it each time. Always black beans, corn, and cheese and then whatever I have on hand for vegetables. Tonight we're adding scallions and green peppers from our garden. Then you mix the the filling items with some enchilada sauce, cumin, chile powder and stuff it in the egg roll wrappers :)
 
I think we're having either baked spaghetti with green beans or bean & cheese tostadas with taco rice, whichever I decide sounds better tonight around dinner time lol!

Vegetable Lasanga
Cheese Rolls
Fresh corn on the cob

Totally winging it on the lasanga. Going to make up my own recipe. LOL

Tomorrow is:

Cheese Enchiladas
Refried Beans
Spanish Rice

we're having zucchini frittata for supper tonight. Tomorrow will be a choice of leftover frittata, leftover taco filling (made into a salad perhaps or with tortillas) or leftover grilled steak & sweet potatoes from Monday. Friday is creamy chicken roll ups
 
Stroganoff is in the Crockpot on DD's request for tonight.

Tomorrow is Potatoe Skins with cheese, bacon bits and green onion.

Friday is Spaghetti with garlic Ciabatta bread
 
I'm going to make Fajita Enchiladas... We have some leftover sirloin that we grilled up over the weekend. I'm going to wrap that up in a tortilla and top with Enchilada sauce and lots of cheese. It sure sounds yummy to me right now. lol.
 
I'm going to the gym at 6, so I'll just have some salad and hummus after I get done since it will be late and I won't be super hungry after that.
 
Pork chops in the crockpot with cream of mushroom soup, salad, homegrown green beans, biscuits.

And yes, this thread is totally making me hungry.
 
Let's see, it's almost 6:30pm and I have no idea ... I guess it depends on what DH brings home, lol. Perhaps Thai take out ;)
 
We're having pancakes and bacon

Slacker. ; ) I can't talk, though, because we had bacon and eggs for dinner Monday night, no toast since we were out of bread and no pancakes since we were out of flour.

Last night we had pulled chicken BBQ sandwiches with sliced carrots, and tonight we're having pork chops with mashed potatoes and green beans.
