What's for dinner?

I was just trying to figure out the same thing...
I'm thinking tonight will be pork chops...i'm just not sure how I'll cook them yet. :D

I'm pretty sure we're having hamburgers tonight...DH bought the stuff to make them yesterday but we had tacos, so I guess hamburgers it is tonight! :)

I only have to feed myself, Des and some buddies from work are gonna grill some steaks and drink some beer when he is done work.

So ... probably my staple summer meal - chicken burger. lmao

I am so GREEN with envy here! My DH is the world's pickiest eater, so I have to cook in ways that I can seperate... meaning no casseroles, because he can't pick out what he doesn't like. GAH... it's annoying.

I have chicken out so far... still trying to come up with what to do with it...Maybe peanut butter chicken with rice.

Whatever the littles want. Jeff doesn't get home until about 8 and he can fend for himself. Probably dinosaur chicken nuggets or pb&j. Unless my mom feeds them, in which case I will have popcorn. LOL

We are having burritos... although I might change it if the weather stays. It is gross and rainy- so it might call for something less summery.

OMG I feel your pain girl! Jordan sucks like that too!

Tonight is burgers and dogs. Tomorrow is grilled chicken over bowtie pasta with some zucchini.

Im thinking maybe some chicken and stuffing, mashed potatoes and corn on the cob.

Im lucky my husband usually cooks. I did for many many years and he just sort of took over lately. He will eat anything but Im a little pickier. No chunky tomatoes(tomato sauce is ok), mushrooms, onions or peppers. No green vegies like broccoli, spinach, collard or mustard greens. I love carrots, celery, green beans, string beans, peas, lettuce, hominy, potaotes and corn.

Don't be too green, Jac. Rob is a total meat n potatoes type and sometimes I'd just as easily have a sammich for dinner. I'm all about ease. He also only likes a handful of veggies... I love veggies. mmmmm

I made a loaf of cheddar cheese bread today & that inspired me to make grilled cheese sandwiches with it. So we are having noodle soup with grilled cheese sandwiches & salad.

assuming I have broth somewhere in the house

Well, we changed our minds! LOL We're going to have meatloaf, scalloped potatoes and green beans.

my son is headed down the same road as your DH and it makes me crazy.

I am thinking shrimp (not sure how I'm going to cook them, pasta with light cream sauce and broccoli.

This sounds good! Would you please share your recipe???

It's delicious! Here ya go...
Spicy (Doesn't have to be spicy) Peanut Butter Chicken

1/2 cup natural peanut butter
1 cup water
2T soy sauce, or Tamari (which is basically gluten free soy sauce)
1T brown sugar (if your peanut butter is sweetened skip this)
2T veg oil
3 cloves garlic, minced OR 6 cloves ROASTED garlic (powdered also works)
1/2 tsp crushed red pepper (use more if you would like this anything but mild or leave off entirely)
4cups broccoli (optional)
4 chicken breasts

Cut up chicken breast into bitesize pieces and brown in a pan with olive oil (just enough to coat the pan).

Mix together peanut butter, 1/2 cup water, soy sauce, veg oil, garlic, and red peppers (if you are including them). Mix until smooth.

When chicken is browned, add broccoli and 1/2 cup water. Bring water to a boil and reduce heat to simmer. Simmer for 7 mins (or until broccoli is steamed).

Add peanut butter mixture to chicken and broccoli, mix gently.

Serve with white rice

OMGosh!! I just made the Creamy Broccoli-Stuffed Chicken Breasts that I mentioned before & I just have to say...YUMMY!!! They were SO good! First time cooking them & they will definitely be a regular around here! :)

The fam is eating out and I'm on a liquid diet, so I'm no help.

I'm taking note of the brocolli chicken recipe though. Those are 2 of our staples around here.
