What's Cookin' This Week?

I'm struggling to put together our meal plan for this week. So help me out! What are you planning on eating at your house this week?
 
chicken 'n' rice (which is chicken in the crockpot + dry soup mix & water served with rice & shredded cheese)

Kinda Chili (pre-seasoned pre-cooked ground beef + water + diced tomatoes + corn + black beans in the crockpot)

'skbeddi'

fried chix + mashed potatoes or PW's Crash Hot potatoes
 
I'm making taco meat for taco salads and Albertson's had steaks on sale super cheap, so I'm going to stir fry those with some veggies. I"ll throw in a simple baked fish (Ahi Tuna) with green beans when I get sick of leftovers. I'm also making an Indian spiced chicken, potato, and spinach dish later this week.

Um, what night is the Indian spiced chicken? Got room for me at the table?? :D Sounds delish! Why don't you just come to my house and cook us dinner all week? :w00t:
 
Just did my meal planning yesterday for most of the week.... we have:

- Chickentenders in a pepper cream sauce with a patato gratin and some green beans fried with some onion and garlic.
- Lasagne with garlic bread.
- Chicken burrito's.
- Greek Kofta with a salad and some rice.
- Tomato butter shrimp linguine.
- Creamy tandoori chicken with some rice.
 
so far ordering chinese tonight because I just cleaned the kitchen for the realtor coming tomorrow and I don't want to do it again

I'm sick and DH's sick....so...I have no idea lol! I need to get to the store and have a meal plan but it hasn't happened yet.

Tonight is Spaghetti..... don't know beyond that, I still have to make my shopping list for tomorrow for the rest of the week.
 
Soup in the slow cooker today

Piri piri chicken, potatoes wedges and corn on the cob tomorrow.

I havent planned for after that as I do my shopping on a Wednesday so I'll sit and do it tonight or tomorrow :)

Hubby requested two soups this week, so we'll be doing a wild rice chicken soup and a cheesy broccoli soup. I'm planning a super easy tamale pie for one night, breakfast for dinner on Thursday, and leftovers on Friday, as usual.

It's on the schedule for Thursday. I can show you how to make it. It's not complicated.

It's basically just Aloo Palak, which is vegetarian, so it would be good for Katie. I don't use any cream in mine. It's normally served with rice or naan, but I like it with a similarly spiced chicken I make all the time. I use boneless, skinless chicken thighs and bake them with a dry rub of cumin, Garam masala, garlic powder, and Turmeric.
 
We came home last night from a 10 day road trip. I'm scrounging in the freezer for some food. (YEAH for freezer cooking!!!) Found some frozen split pea soup. That will be tonight, plus I think I'll make some fresh biscuits.

I'll likely also put a chili of some sort in the crockpot later this week and make some cornbread.

And maybe a hot sandwich: like sausage (we use the vegetarian kind) with sautéed onions and peppers & melted cheese on hoagies.

Now I'm getting hungry.... :)

lol! I will only cook-cook 5 dinners each week, we eat dinner at church on Wednesdays so that means 1 day each week will either be junk for all or junk for us and pb&j's with chips and applesauce for the kids. Of course junk covers anything that requires no prep from me, so it could lunchables or frozen meals or salads - anything that I don't have to do more than decide and maybe microwave.
 
These are what I have planned for this week:

Monday - (changed from original plan due to today being a snow day and we have time to make it) - Homemade pizza with garlic, basil, oven-dried tomatoes, and red onion
Tuesday - Game night so I'll be taking a bag of vegetarian chili out of the freezer previously made and we'll have chili baked potatoes
Wednesday - Stir-fry broccoli and red bell peppers over brown rice
Thursday - Game night so I'll be taking some Caribbean Black Bean Soup out of the freezer
Friday - Cajun Cornbread Casserole (meatless)
Saturday - Tex-Mex Shepherds Pie (meatless)

tonight I'm going all out since it's DH's birthday: Gouda-stuffed pork chops, broccoli & cauliflower gratin and homemade applesauce. And probably a cheater microwave bag of brown rice and quinoa. And black forest cake for dessert.

Last night was steamed salmon on wild rice with a twice-baked beet "casserole" (with caramelized onions and orange zest) and a winter salad with citrus vinaigrette. And poached pears. And the pear poaching liquid was so delicious that we turned it into a sangria.
 
We are having tacos tonight, vegetable beef soup tomorrow, and idk beyond that. I have pork chops, chicken, and ground turkey in the freezer. :)
 
You people are way too organized... I did buy fish and green beans at the grocery store on Saturday. Other than that I'll have to hit the store again tomorrow on my way home. The beauty of not cooking for too many people (or NO others than myself) some nights.
 
We are a well fed group!

I decided on the following
Monday - Fend for yourself night
Tuesday - chicken scampi with zoodles with salad
Wednesday - Steak, zucchini,squash and tomato casserole,
Thursday - Chicken pizziola/Eggplant Parm for vegetarian with antipasto salad
Friday - Going out to dinner - Kids french bread pizza
Saturday - Chicken or black bean tacos and chicken taco salad (for low carbers)
 
Last night was arroz con pollo.
Tonight dh and I ate out... alone!
Tomorrow is meatloaf I think
Wed is a super easy microwave something cause daddy is out of town night.
Beyond that is beyond me.
 
Tonight, Zaxby's is having a fundraiser for my daughter's gymnastics team, so we'll probably get take out from there. Tomorrow night, I'm making this:

Sooo....turns out Zaxby's night is tonight, not last night as I originally thought. Ooops. :o

I ended up making Easy Tomato Baked Chicken last night because it's so darn easy, and I needed something last minute.

So that means my Crock Pot Chicken Taco Chili gets bumped to tomorrow night.

Thursday night, I have a work dinner, and the kiddo is at her dad's, so I'm off the hook.

Friday night, I'll do Crock Pot Balsamic Pork Roast, and the rest of the weekend I'll figure out later. :p
 
We ate out last night. This is the food from last week that i never cooked because I don't seem to cook when Jon is out of town.

Tues- Chicken
Wed.- Shepherd's Pie
Thu.- Stovetop Mac and Cheese
Fri.- Frank and Beans
Sat.- Red Beans and Rice
 
The New Year's Fairy dusted me well! I have my whole week planned out AND shopped for. {pats self on the back}

Tuesday-Grilled fish, grilled corn & green beans
Wed-Lemongrass chicken & mixed veggies
Thursday-Fish tacos, spanish rice & black bean corn salsa (with leftover grilled fish & corn, SCORE}
Friday-Beef stew
Saturday-Honey Lime Enchiladas

It really is the best feeling to know what's for dinner, be prepared for it AND have someone to share your success with. : )
