What do you do in the evenings?

for starters - I don't do housework. I'm taking care of kids and housework all day long and everyone else in my house gets a time when it marks they're done doing things that they have to do, so why can't I? Anything left undone by the time kids go to bed will just be left undone.

Usually I knit and watch Netflix or scrap and watch Netflix.

That has always been my philosophy, too. When the kids were younger and there was no "after bedtime" break for me because I had 1 waking up and needing me all night long (sleep apnea and a genetic disorder, though we didn't know it at the time), taking that time for myself was the only thing that kept me sane. DH never got that because he was done with parenting at 8 pm and didn't have any more responsibilities until he left for work at 7 am. Now I work part time and sometimes have to give my evening to that, but I won't do housework unless I spent some of the kids school hours doing something for myself (which wasn't even an option while they were your kids' ages). Take your evenings, and don't feel guilty!
 
Once the kids are in bed, i either switch on the laptop and do some scrapping, watch a dvd with other half or read x
 
I want to start playing a game or cleaning up a part of the house or doing something together instead of just sitting and watching TV or a movie each night. However, to be fair the kids are pretty busy a few nights a week and often don't get home until 8:45 from their activities. It's hard to be a good mama some times.
