Those awesome kits seem to fall into two categories: specific themes ("All About Me," Food, and travel) and General Life. Personally, I only pick up themed kits if I have specific photos/already-occured events in mind; otherwise themed don't get used because I can't make the colors work for future events.
You said you don't have photos in mind, but maybe I can help: Do you have any travel photos or stories (for a photo-less page) for the "Our Trip" kit? If so, then that would be one to pick up if you don't already have a travel kit.
Celebrate You would fall into AAM category, but I bet you could use it for celebrating graduation AND getting into your new online program--then when you graduate from that, you could use that kit again.

Plus it works with the Kitchen kit: you could scrap about a recipe you made that you loved or a special treat you made your mom. (Sometimes we should celebrate the everyday, ya know? Heck, I haven't left the house in 3 weeks...I might start celebrating the fact I took a shower every day lol.)
This Life 2019, Looking Back, and Done Adulting could all be mixed-and matched, if that's important to you. It is for me because versatile kits means my pages look different even if I mix the same 2 or 3 kits on like 5 pages. Love that versatility!
Anyway, those are my thoughts. I think you could randomly grab any of those and have a great time scrapping, so I see why it's hard to narrow it down!
