Vegan recipes for cookies/bars?

A friend of mine is hosting a party in mid June and my mom and I said we would make bars/cookies/desert type items for the party. She mentioned there will be some vegans... so we want to be sure we have something for them, too.

Any great tried and true recipes that you have? :)
 
Me, no. lol But I do belong to a rather large group of alternative parents for my area and I know there are several vegans in it, so I can ask.

Should these be nutritious or just yummy? I love these:

They are like peanut-butter Rice Kristpies with a bit (but not much; it still uses corn syrup, though honey can sub if she does that) more wholesomeness. I add Craisins and slivered almonds, and cover with parchment to press into the pan really firmly. The AllRecipes version got re-set at some point (it has 400 review now, but had tens of thousands of reviews when I first discovered it)

One cup crunchy peanut butter, one cup sugar, half a beaten banana (works even better if its a frozen banana that you thaw in the microwave until its mushy). Mix well, roll into balls and flatten, bake at 350 for about ten minutes. Easiest, tastiest cookies ever. You can get coconut flakes or vegan chocolate chips or almonds or whaaaatever to mix in with them. I use brown sugar usually because white sugar and I had a little falling out.

You can make lara bars/truffles with dates, nuts, coconut, a bit of peanut butter, and vegan chocolate chips (Kroger has organic vegan ones, just read the label). Stick everything into a food processor, it takes a while, but when its pretty smooth, wet your hands so they don't get sticky and gross, then roll the mess into little one-inch balls and put them into little mini cupcake papers.

I have one for no bake drop cookies: http://deliciouslyorganic.net/no-bake-cookies-chocolate-paleo-grain-free-gluten-free-dairy-free/ I dont use coconut sugar--i sub a nit of maple syrup. i also use peanut butter and co's white chocolate pb in there. I also dont add any nuts. you can totally use this recipe with oats too. Really you can use substitutes for almost all recipes. godairyfree.org has a decent amount of vegan or optionally vegan recipes. Most of what I have made off there has turned out delicious. (The double the cinnamon rolls are amazing - and loved by my entire extended family - and my MIL's friends). I think onceamonthmom.com has put out a couple of vegan mini-menus as well.
 
I can't thank you, two, enough!!! I was lost on where to even begin to search for something that would be tasty... :D
