Type 2 Diabetic- Recipe sharing :)

Hey everyone,

I was diagnosed with Type two diabetes almost 2 years ago and to be honest I have tried soooo many diabetic friendly recipes but jeepers many have been absolute failures and tasted like cardboard! I have managed to stay of medication so far which is an absolute bonus but I am getting bored of my recipes!

I have purchased cooks books, hooked up and registered with the National Diabetes Services Scheme here in Australia and attended a few all day Diabetes education courses which were really helpful and I have slowly collected a few flipping awesome recipes...but I was wondering if any of you who also have diabetes have some tried and true meals that you cook and that your whole family gobble up?

When I next cook my 'Lemon KETO Chicken' I'll take a photo and share the recipe with you along with others that I have that my hubby and son just can't get enough of.

So, maybe the whole family didn't like this one, but I thought it was okay. I took my regular lasagna recipe and used Egglite (life?) wraps as the noodle layers. With that much sauce, cheese, and meat I didn't really mind no noodles. If I were to make it again, I would let it sit in the fridge overnight. Maybe that would have softened the wraps a bit.
Also, I just bought little cups to make the "cheesecake" because we liked it. You take Greek yogurt and put cookies in them to make it taste like cheesecake. I layered Goya (I've used both chocolate and vanilla found near the tortillas in the store) cookies with the yogurt and let it sit overnight. I don't think that it tastes like (mine at least) cheesecake, but it was a light and refreshing little dessert.

I’ve done the “Japanese cheesecake” trend too and it was a great treat!
