Talk to me about spices

I am a dud in the kitchen and I need some advice. I'd like to make a rice/bean mixture similar to the 90 second dinners I've been buying. They are too expensive when I buy two of them for one meal (because Naomi eats one and I eat one) and it's silly when I could be making a big batch myself! I've been buying a few different brands but basically it's a Santa Fe type mixture...rice, beans, corn, diced tomatoes, etc.

I figured I'd buy some canned corn and canned petite diced tomatoes, some rice and lentils, but I don't know what kind of spices to put in it, or if I need any sort of liquid in it either. Thanks girls...I'm such a dork in the kitchen :D
 
Well, I actually have never heard of these 90 second meals that you're referring to, but with the combination of rice, beans, tomatoes, etc, I'd suggest some cumin...
 
There's a Fajita seasoning mix that I use in a lot of Mexican dishes. It seems to go with everything. It's probably McCormick. lol. Also, a little lime juice and cilantro will do wonders.
 
well, this would be nothing like the 90 second meals (although I don't know what those are anyway!) but we often have rice with diced tomatoes with a few of our meals. My hubby adds just about every spice. I add chili powder, garlic powder and onion salt. But like I said, I doubt it would be like what you're used to, but it would still be yummy!

This is one of the ones I've been buying (and my favorite)...they are being marketed as having 40% of your daily veggies.

But I also like the Hormel version of it and I like the Healthy Choice Steamer version of it too...it just seems silly to pay $6 for two of them when I could just make it myself in a big batch.

I should have specified they aren't very spicy and I don't do spicy. Can you put chili powder in something and have it be tolerable?
 
I totally agree w/Tracie! Lime juice, cilantro & a little McCormick's Fajita seasoning! YUMMY!
Also, look on the back of the package & read what spices are listed in the ingredients! ;)
