strawberries... share your favorite recipes with 'em

i really do hate when grocery stores put food that i love directly in the front of the store so i have to see (and smell) it when i walk in.. because inevitably, i buy it. like the 2lb box of strawberries that is now sitting in my fridge. but holy crap, the whole front of the store smelled like berries. it was like heaven. so i had to buy some. cause, i LOVE strawberries. :thumbup: however, i have a roommate who hates strawberries. :thumbdown:

so. link me up to your favorite strawberry recipes (: so i can bake things/make things. and not let them go bad cause i can't eat them fast enough.
 
I know! We have a fab u-pick hydroponic strawberry patch down the street that the kids love. We go once a week and end up with buckets of berries. I've tried making strawberry bread or muffins to use 'em up and it honestly turns out weird when the berries are baked. They're not like bake-able blueberries or bananas. At least for me. They do freeze well to use for smoothies, though.

Other than just slicing them over our greek yogurt, ice cream or cereal, or eating them as-is... here's a couple ways I use strawberries lately:

Fruit Salsa
Makes 2 1/2 cups
Ingredients
1 large Granny Smith apple, cored and cut into wedges
2 kiwi fruit, peeled and cut into pieces
8 strawberries, remove stems
2 Tbsp. apple or any fruit jelly (optional)

Place apple pieces, kiwi pieces and strawberries in a food processor. Add apple jelly, if desired. Coarsely chop. I serve this with cinnamon sugar pita chips. YUMMY!!!

Strawberry Salad
Bunch of sliced strawberries
Leafy lettuce (I like a mix of butter lettuce and spinach)
Handful of walnuts, chopped
cranberry raisins

Top with a raspberry walnut dressing, or a creamy poppyseed dressing. I make this salad with roasted chicken and croissants or you can shred up some rotisserie chicken on top and make it a meal.
 
ooo. i like the fruit salsa idea! may have to go get an apple and kiwi, and make a batch of that. i wonder if the boy will like that.

and i never thought about freezing them. so thanks for that suggestion!
 
I got the fruit salsa recipe at a Tupperware party. I make it with my chopper thingie I bought from them. It is seriously to die for.
 
We make strawberry shortcakes! In fact, we are going strawberry picking tomorrow morning and I just got the stuff at the grocery store to make shortcakes tomorrow.

They're easy :
1. Slice strawberries and place in a bowl with a sprinkle of sugar on top (not a lot but a little sugar helps draw the juices out). Cover and put in fridge for a few hours.
2. Bake a batch of biscuits.
3. Make whipped cream or store bought in a can or Cool Whip will work too.
4. Take strawberries out of fridge and lightly smash then with a potato smasher or a fork to crush them a bit.
5. Cut biscuit in half, top with crushed strawberries and top with whipped cream.
6. EAT!
 
I do a low fat version of a strawberry shortcake that my family loves. Angel food cake slices, white chocolate non fat pudding, sliced strawberries and a dollop of whipped cream. Yummy! Other than that I just eat them whole. They are my favorites right now. I call them "a chubby girls potato chip!" :D
 
My kids and I both LOOOOOVE strawberries. We have our own patch that's kind of small still but next year should be awesome. We have a few berry farms around here and my aunt has a huge patch so we get them a lot, too. Here's one recipe I've been meaning to try...I think I'll pull it out tomorrow and give it a whirl. It looks amazing!

strawberries in a bowl, sprinkle of sugar, top with milk & enjoy. When you get to the end, you're left with strawberry milk. SO yummy (kind of a strawberries and creme)

shortcake: slced in a bowl, sprinkle sugar, squeeze of lime - let sit for a couple of hours in the fridge, them put them on top of angel food cake, pound cake, biscuits baked with sugar sprinkled on top,

with whipped cream

dipped in chocolate/white chocolate **YUM**

homemade strawberry lemon or limeade

in a smoothie with vanilla yogurt
