Speaking of Easter... Need Recipe

MIL suggested I bring a vegetable to Easter dinner.

Jeff is not a big fan of green bean casserole (yum!), so that's out. MIL is already making cheesy potatoes, so I'd rather not bring another side dish with lots of cheese in it (esp. as that means Grandma won't eat it, either). Creamed veggies/souffles make me gag (me and my texture issues...).

What's left?! *lol* I'm having a hard time finding anything that sounds good over at Allrecipes. It's either a veggie casserole with lots of cheese or just veggies in a bowl with a couple spices mixed in. Is there no middle ground here?!

I ususally do a green bean/tomato saute. It's green beans, 1 can Italian Style diced tomatoes and some herbs. If you're interested, I can get the actual recipe when I get home tonight.

Another option is a black bean/mango salad (You can also substitute pineapple for the mango)...yum! Again, recipe on demand when I get home tonight.
 
I have a mean corn casserole recipe...I have texture issues too but will eat this one.

1 can kernel corn drained
1 can creamed corn
8oz sour cream
1 box jiffy corn muffin mix
1 stick butter salted.

Melt butter and mix all ingred. together. Bake @ 350 for 45 min.(may need longer, check w/ tooth pick).

TA-DAH!!! pretty easy! DO NOT use lo-fat sour cream...tastes like crap lol Use the real stuff!
 
One of my favorite is Peas and Carrots in white sauce. It's creamy but, not creamed, has the same texture as if you'd taken the cheese sauce from some broccoli and carrots and put it over peas and carrots!! We always just get frozen peas and carrots, the mixed ones, then some white sauce (I can't remember the whole brand, it's Mrs. something) Then, just mix them... Heat and eat!! :)

Now that I think, I think the white sauce is by Mrs. Cubbin's but, I'm not 100%!!
 
I have a great recipe for a yummy corn that you can do and take in a crock pot or slow cooker. A pretty yellow would be pretty for Easter. Just let me know if you want the recipe. :)
