To be honest, I haven't done mine for this month's bingo yet but I've done a couple for some past bingo challenges:
Now that I think of it, you could do something like "my favourite layout" and explain why or you could include one old and one new layout to show how your style has changed.

I'm not doing Bingo this month, so I didn't read the layout prompt you're asking about. I'm sorry if my ideas make no sense for the prompt!
I've scrapped a few pictures of my DD looking through our albums and journaled about why I scrap or about how much I love that our stories are important to her, too. Maybe a photo like that where you can see the layout that someone is looking at?
I scrap vacations in separate photobooks then just put a couple of pages of highlights in our main album. If you happen to do anything similar (doesn't have to be vacations; anything scrapped in its own album or photobook would do) you could do a page with some of the pages from the separate album.
I think your sons graduated HS this year, right? Maybe a look back at first day of school layouts over a period of time (K-12, high school only, a few random years, etc.)

Here's mine... This trip 10 years ago prompted me to start digi scrapbooking, so I collected some of my very first layouts, and made a layout about being new to scrapbooking, as well as a travel page I can include in our travel book (I never got these layouts printed as I was very green at the time and they're definitely not my favourite, but they do have a special meaning to me so would like to have them somewhere!)
