Recommendations for Cake Walk Contributions

Ellie's school is having their end-of-the-year Fun Fair this Friday, and I signed up to bring something for the cake walk.

I'm a pretty good baker, especially when I don't have to make it GF, but I thought I'd ask y'all in case there was some superyummy and supereasy dessert you'd recommend I bring.

Not that I'm planning on making something from SCRATCH but if you have a recipe for a spruced up box mix, I'd be all ears. :D

This is an important question because it will set you up for the rest of her elementary career. What kind of mom do you want to be? Start small! Each year you can get a little better.. don't be "that" mom that makes all other cakes look like trash. hahahaha

Here is the easiest white cake recipe to make from scratch - you don't have to worry about the order of adding things - just dump it all in a bowl and beat with a mixer then dump it in your cake pan. Slap some frosting on top and you're done.

2 cups flour
1-1/4 cups sugar
2-1/2 tsp. baking powder
1 teaspoon salt
1/3 cup soft butter/margarine
1 tsp. vanilla
1 egg
1 cup milk (or you can use orange juice or pineapple juice to give it a different flavor).

Dump all in a bowl, mix, and bake at 350 for 20 minutes (check at 20 minutes with a tooth pick of course). Also makes great cupcakes.

I'm gonna go make one right now as a matter of fact!:D

This got me ROFL-ing hard! :p

Chocolate chip muffins! Super easy. Sweet and yummy without the trouble of icing them like cupcakes.

Kendall, it can be anything baked.

KCB, ha ha ha! I'm definitely not THAT mom. I never volunteer in her classroom (my mom does, though, so I count that as my contribution - ha!), and I refuse to join the PTA (despite my sister's, who is a teacher at the same school, best efforts). :D

We make a s'more type recipe that is ALWAYS a hit. And it's easy. Made just like rice krispie treats but with Golden Graham cereal instead.

5 tbsp butter
1 bag (10 oz) marshmallows
1/2 bag chocolate chips - FREEZE for a few hours before making
Golden graham cereal (most of a small box)

Grease 13 x 9 pan. Melt Butter in large bowl. Add marshmallows and melt in microwave. Mix well. Add golden graham cereal a little at a time and mix well. Should be well coated and start to get stringy when no more cereal can be added. Then add half a bag of chocolate chips and mix well. Press into pan with buttered spatula or bag. Chill before serving, cut into pieces.
