Recipe for chicken thighs

DH and I love chicken adobo.... Toss the chicken in the crock pot, add 3/4 c soy sauce, 1/2 c white vinegar (don't let it scare you, it cooks off), 6 cloves of garlic, and a small onion sliced thin. Cook it on low until it's done... 6-8 hours.

And the kids love thai chicken:
Mix together 3/4 c mild salsa, 1/4 c. peanut butter, 2Tbsp Soy Sauce, 1Tbsp lime juice, and 1/4 tsp ground ginger. Put the chicken in the crock pot, spread the goop on top and cook on low for 4-6 hours.

I kinda love soy sauce and the crock pot if ya can't tell ;)

Braise them (at least 4, bone in preferably but boneless ok, just cook less) in a crock pot or really low oven on a bed of peeled & sliced parsnips & carrots. Pour in a bottle of apple cider (hard or regular, sparkling or still) and let cook 2 hours in oven 6 hours in crock pot.
 
hah Nikki!! that's my theory too hehe

but if you are like me and don't wanna cook..just toss them in a crock pot like ev1 else suggested. You can also toss a 1/2 jar of salsa and a can of black beans and cook..then serve over rice
 
Mmm... Chicken Adobo.... sooooo yummy.

Our favorite thing to do w/ thighs is to bake them in the oven using the Bisquick recipe (on the back of the box). Its seriously BETTER the fried chicken and its our whole family's favorite meal.

(and yes, I said bisquick)
 
Baked Teriyaki Chicken

I don't brush the sauce on every 10 mintues though. I just flip the chicken over halfway through. And I usually cut the recipe in half.

The other recipes here sound good; I am going to have to try them.
 
Oooohhh, Annie, those sound GOOD! I think I might do the Thai chicken. I cleaned out my pantry this week and found SIX jars of peanut butter. So I need to use some of them up!
 
This is a little recipe I put together from things I had available (I do that quite a bit :p ) so we'll call this...Trina's Chicken (haha!)...

Throw your chicken in your crockpot (and even be frozen...mine usually is).

In a bowl, mix 1/2 c. melted butter, 1 can Cream Of Mushroom With Roasted Garlic soup (Cream Of Mushroom is fine if you don't have the other), 8-16 oz. sour cream, 4-8 oz. cream cheese, and a packet of dry onion soup mix. Stir till smooth and then pour over chicken.

If chicken is frozen, it obviously will take longer to cook, but since I typically start with frozen, it will cook all day on low. When it's done, I either cube the chicken or shred it, and you can then serve it over rice, noodles, or mashed potatoes....yum yum :)

I LOVE Adobo! And, if you just put it in a pot on the stove you don't have to cook it as long. I love to eat mine over steamed rice!
 
I sprinkle them with garlic powder, crushed red pepper flakes and pour a bottle of Yoshida's over them. Bake at 350 for about an hour. Serve over white or brown rice with broccoli or asparagus.

I'm a lazy bum, I do the crock pot so I don't have to supervise the stove lol! GOTTA have rice! Hmm, now I want that for dinner
