Pot roast...

Who has a KILLER recipe for pot roast? I have been preparing my roast the same way for years now and it's getting old. I get compliments on it when people come over, but I want a new recipe. Basically, I throw the meat in the crock pot with a chopped onion, carrots, whole cloves of garlic (a few crushed), Cream of Mushroom, beef stock, and some salt and pepper. The Cream of Mushroom might sound a little weird, but it really helps keep the roast really tender and moist (and makes some good gravy at the end).
 
I do mine with cream of mushroom soup, onion soup mix, mushrooms and onions. That's pretty much it.
 
Mine is a beef roast covered with lots of baby carrots, red potatoes and sometimes a small onion sliced and then I mix one box (2 pkgs) of the Lipton Onion Soup mix with about 1-2 cups water (depending on how much meat & veggies I have) and then pour that in the crock pot and cook on high for several hours til done. It is SO yummy, and you can make a gravy out of the broth after it's done cooking.
 
I do onion soup mix and water and that's it. Depending on my mood, when I brown the roast I'll add some spices (like oregano/basil/salt/pepper). But I'm of the opinion that italian seasoning can never make things worse, so take that with a grain of salt :p
 
ooo cream of mushroom. i will have to do that. i do mine similar (minus the COM) but i add shallots. yummo!!
 
We got so sick of the onion soup mix! IMO it doesn't give it enough flavor...so we do it this way now..

Mix all these in a crockpot then put the pot roast on top of it:

3 cups chopped onion
1.5 cups water
1 cup red wine
2 pkgs beef gravy mix
1/4 cup ketchup
1 tbs oregano

(double this for a BIG roast)

And cook on low 6 or so hours or high 4 or so. It gives SUCH a better flavor than the onion soup mix, in our opinions :)
 
no one else does a roast with red wine?? So, I throw in about two cups of red wine, and full sprigs of rosemary and oregano. I cut garlic cloves in half and then stab the roast all over, and stick the cloves into the roast as deep as they'll go. That infuses the whole roast with the most delicious garlicly flavour.
Oh, also I use roast bags. Get them at your grocery store... changed my life! :) Just throw the roast in, the liquid and veggies as you want, and tie up the bag. Pop it in the roast pan but now it self-bastes and doesn't mess up your roasting pan! :)
 
I put my roasts in the crockpot with
1 packet italian dressing mix
1 packet ranch dressing mix
and about 1 cup water
Its very flavorful, and whats left makes a yummy gravy!
 
MMmmmmmm, this ones delish!!!

1 cup ketchup
1/4 cup grape jelly
1 packet onion soup mix
salt/pepper to taste

YUMMO!!!
