Do you have a good recipe for roasted pumpkin seeds?

I've got some pumpkin seeds drying right now and I will roast them tomorrow. Thinking of trying THIS RECIPE.

(I will be posting another thread for jack o'lantern pics as soon as I get my photos uploaded :).)

I'm curious too! We just baked ours yesterday and put coarse salt on them. Can't wait to see if anyone has some yummy ideas!

We carved our pumpkins last weekend, and left the seeds out to dry.
Then we forgot about them.
They grew mold.
Not so tasty.

Normally, Jordan bakes them and adds salt and old bay seasoning to it.

We got some of this at work last week and I can't even stand to use it after you posted how much Jordon uses it...hehe.

HAhahahahahahaha, omg, I'm sorry! LOL!

It's good on french fries and seafood. But really, that's all I care to eat it on.
It's worth tasting, just don't go overboard like he does, LOL!

I have heard of putting cayenne seasoning on them but have not tried it yet....if I did at least my kids would not eat them so more for me!!!! I usually just do salt though!!

I normally make the sweet & spicy ones since those are my favorite and also the cayenne seasoning ones.

I've made curried ones:

1 egg white
2 teaspoon curry powder
scant 1/2 teaspoon fine grained sea salt
1 cup fresh pumpkin seeds

Preheat oven to 375.

In a medium-sized bowl whisk together the egg white, curry powder and salt. Add the pumpkin seeds and toss well. Drain off any excess egg white (using a strainer) and place seeds in a single layer across a baking sheet. Bake for about 12 minutes or until seeds are golden. Sprinkle with a bit more curry powder when they come out of the oven. Taste and season with more salt if needed.

and I came across a recipe somewhere where you toss the pumpkin seeds in butter and some salt then bake like you normally would and when they are done baking you sprinkle them with any flavor/type of tea (ground up into a powder). I haven't tried this but might! I know there are some pretty cool tea flavors out there that sound yummy!

*****ETA: I found the tea recipe one (it was actually a site I had visited before to get one of the other recipes I use) anyways, here is what it says:

Black Tea & Butter Pumpkin Seeds

You can use many different types of tea here. I opted for a smoky black one, but you can go for one infused with other flavors, or even tisanes (I have a dried lime tea that I be would be interesting in this recipe). Choose a tea that is fragrant and has a pronounced flavor for best results.

1 teaspoon (black) tea
3 tablespoons unsalted butter, melted
scant 1/2 teaspoon fine grained sea salt
1 cup fresh pumpkin seeds

Preheat oven to 375.

Using a mortar and pestle or spice grinder, grind the tea into a fine powder. Set aside.

In a medium-sized bowl combine the butter and salt. Add the pumpkin seeds and toss well. Place seeds in a single layer across a baking sheet. Bake for about 12 minutes or until seeds are golden. Sprinkle with the ground tea. Taste and season with more salt if needed.

Ooh yes I saw Pioneer Woman's the other day and I think I'll go with that. Simple but looked sooo tasty.

(and holy goodness I love your avatar Mimi!!!)

I dry mine and then spray a bit of olive oil on them and add garlic powder and season salt. I was thinking of trying cinnamon and sugar this year.

Am i the only one who doesn't bother drying them? I just wash them, pat them dry and toss them in olive oil and sea salt and roast. They turn out yummy to me! LOL

I dunno but now I feel fit to cry. We don't have good sized cheap enough pumpkins here in Alaska. :( They're all either tiny or ridiculously expensive. Anyone know if they sell pumpkins after Halloween? Like...through to Thanksgiving? I see a few of these recipes that look nice. I'm considering personally trying soaking a day or two in lime juice and then dusting with sea salt and chile powder. I want pumpkin seeds.
