Last minute dinner: Need ideas! Feeding 6 ppl...

Just decided to have a casual dinner at our house on Christmas Eve for my immediate family.... 6 adults.

I've cooked so much in the past month that I don't even know what to make. I'm pooped from holiday hustle and bustle, so it needs to be something I can put together quickly (like less than 90 minutes).

I need to go to the grocery store this evening - so I need ideas! I was thinking maybe something in the crockpot? Meatballs? And if so, I need a side? Or maybe finger foods? HELP!
 
How about pot roast? Throw it in in the morning and forget about. You can chop up the potatoes and veggies in the morning and toss them in at the end. Personally I like to serve mine with egg noodles and gravy, but that's easy to do too.
 
Hmmm... I make pot roast all of the time so it seems kinda boring - BUT, what if I made it, shredded it and served with rolls for little sammys?? Yes, yes... I think I might do that!
 
I don't know what the weather is like where you are but here it is SO cold & we're supposed to be getting a bunch of snow so I think we're having a big crockpot of chili on Christmas Eve. But another yummy crockpot soup that we love (I'm eating leftovers for lunch right now lol) is Seven Can Soup. It is super easy to make and tastes super yummy! A coworker of my DH gave us the recipe recently and it has quickly become a family favorite!

Seven Can Soup

1lb ground beef (browned & drained)
2 cans Minestrone soup
2 cans Mixed Vegetables
2 cans Ranch Style Beans
1 can Rotel Tomatoes

Just put everything in the crockpot and cook on low for 6-8 hours (I start it around 9-10am and by dinnertime it's perfect) and then serve with crackers and cornbread or rolls.

7 can soup sounds divine!! After being sick for so long, I'm tiiiiiiiired of chicken noodle, lol! I could def go for some chili right now too.

Can I just come live with you? LOL!
 
We're having homemade chili and nachos tonight...yummmm. The chili only took me about 10 min to put together, but I had to brown some meat which made it take longer. totally delicious! You could always use a cornbread too instead of nachos!
 
A Favorite Traditional side in our family is 3-4 bean salad. It's quick and easy!

1 can of wax beans aka yellow beans
1 can of green beans
1 can of kidney beans
optional can of garbonzo beans aka chick peas

3/4 cup sugar
1/2 cup vinegar
1/3 cup salad oil

1 red onion chop half and slice the other half.

mix it all together and let it sit in the fridge. The longer it sits in the fridge to marinate the better. It's always better the next day but still good the first day.

Ingredients

* 1 lb ground beef
* 1 medium onion, chopped
* 2 teaspoons dried Italian seasoning
* 1/2 teaspoon salt

* 2 (25 ounce) jars pasta sauce

* 1 (15 ounce) container ricotta cheese
* 2 cups mozzarella cheese, divided
* 1 cup grated parmesan cheese

* 1 (16 ounce) box ziti pasta

Directions

1. Cook ground beef and onion in a large skillet over medium-high heat, stirring occasionally, until beef is no longer pink. Stir in seasonings to evenly coat meat; stir in pasta sauce. Set aside.
2. Mix 1 cup mozzarella, the ricotta and parmesan in a medium bowl. Spoon 2 cups of meat sauce into the slow cooker; top with 2 cups ziti. Drop half of the cheese mixture, by rounded tablespoons, over ziti; carefully spread over ziti using back of spoon. Layer with 2 cups meat sauce, the remaining ziti and remaining cheese. Add remaining meat sauce, completely covering all the ziti and cheese. Place lid on slow cooker.
3. Cook on low for 6 to 7 hours or high for 4 to 5 hours or until noodles are tender.
4. Carefully remove lid to allow steam to escape. Sprinkle food with the remaining 1 cup mozzarella; let stand 10 minutes until melted. Serve directly from slow cooker.



I've made this may time and my family LOVES it!!! Just gets some bagged salad and some garlic bread and you are set!!!!
