Okay, I bought myself some dessert tofu's the other day for the sole purpose of trying to find something healthy for dessert. But now that I have them at home I don't know what to do with it.

I was thinking of making a pina colada smoothie with the coconut one and throw some pineapple chunks and juice. Would it be coconuty enough? Or do you have any other suggestions for how to use it? I've got the coconut one and a mango peach flavor.

I actually don't like the pre-made tofu deserts (lest it's toffuti icecream.. but that's different ^_^) so I've never "made" anything with them before. It's going to be basically like yogurt.. I mean I'd assume it will be enough.

(fyi my kid loved them the one time I bought it- he just ate it straight though, I jsut refuse to eat them.. they're just weird to me LOL)

Yeah, I don't like to eat the pre-made tofus. I do have a healthier (non-vegan) tofu dessert recipe if you want it:

CHOCOLATE CHEESECAKE BARS
(the tofu replaces some of the cream cheese making it healthier)
Nonstick Cooking Spray
1/2 Cup Crushed Chocolate Wafers (8 cookies) or Chocolate Cookie Crumbs
8 ounces tofu (fresh bean curd), cut up
1 8oz package light cream cheese (Neufchatel)
2 Eggs
1/2 Cup sugar
3 tablespoons unsweetened cocoa powder
2 teaspoons vanilla

Spray a 9x9x2 inch baking pan generously with nonstick spray. Stir together crushed wafers and flour. Sprinkle chocolate wafer mixture evenly over bottom of pan, set pan aside.
Combine tofu, cream cheese, eggs, sugar, cocoa powder and vanilla in a blender or food processor bowl. Cover and blend/process until smooth, stopping and scraping sides as necessary. Pour mixture over crumbs in baking pan.
Bake in a 350 degree oven for 20 to 25 minutes or till set. Cool on wire rack. Cut into bars. Store in refrigerator. And if you want to you can serve it garnished with fresh raspberries and mint sprigs.
This makes 24 servings:

I've not likely many of the tofu-based smoothies or puddings I've made. However, anything baked, like a cheesecake, has come out perfectly. You might try vegweb.com to find some recipes.
