I have spent the last 8 long years trying to make a good pavlova. My Dh is from NZ and pavlovas are one of his favorite things in the world. In NZ, they are as common as angel food cake here. You can even buy them in almost every store.
It has been a long time of practice. And the bad part is that I don't remember what I did to get it so good. Was is the fact that I used an extra egg white because my eggs were small? Was it because I may have been using a teaspoon of corn starch(for years) instead of a tablespoon like the recipe calles for? I know part of it was using a silicone pad to cook it on.
So, I guess I will have to make more................My husband will be happy.
