Homemade macaroni and cheese?

Does anyone have a good recipe that they have actually tried? My DH wants me to make it tonight...
 
Ohhh I thought you were asking if we wanted some LOL

My dad used to make the best home-made mac & cheese, I wish I would have gotten the recipe. Hoping someone pops in with a great one!
 
My mom make an awesome one, but there's no recipe. Just cook up some elbow macaroni, then throw it in an oven pan of some sort (she has a small round one that's nice and deep she uses). Throw in the bags of cubed cheese (cuz it's easier than chunking it up yourself) so that they are evenly distributed, pour some milk in there, top with bread crumbs, and you're done :)
 
The problem with me making Mac n Cheese is that I always want a DELICIOUS recipe...but I look for lowfat ones, and those are NEVER as good as the comfort food mac n cheese you remember from childhood!

Then the really good recipes...I can't bring myself to make those b/c I know what's going in it!

Not quite as calorie high as the others I have made, and ohhh soooo yummy!
 
I don't have the link...but I know that the Neelys on Down Home with the Neelys made one that had a bacon topping...mmmmm....check out food network for it...
 
My mom has one that I totally loooove. You cook elbow macaroni and spaghetti noodles, then put in some of those KD sauce packs, milk, butter, a few spoonfuls of cheezewhiz, a couple eggs, give it a stir, add salt & pepper if you want, then throw it in the oven for 30 minutes or so. Yummmo. :)

When I make it, I replace the cheezewhiz with real cheese (shredded) and then top with shredded cheese, to make a nice crispy top, like on lasagne. Mmmmm...
 
KD = kraft dinner...the packets of cheese sauce from in there. We don't like the KD noodles but only KD makes good cheese sauce, lol..
 
Mine is quite easy but not low fat at all..

3 c. elbow macaroni
1 lb. shredded cheddar cheese
approx 2 c. milk (I use whole milk but any will do)
1/4 c. butter
flour
salt & pepper to taste

Boil macaroni until al dente. Melt butter in a saucepan. Add flour until you have a thick rue. Add milk, salt & pepper. Once milk has come to a boil and thickened somewhat, add shredded cheese. Melt completely. Put macaroni in a baking dish big enough to hold it all (I think mine is a 9x9 pan). Pour sauce over macaroni. Bake at 350 for about a half an hour or until the top is golden brown. Serve with peas.

Oh, I always finely chop about a 1/4 to a 1/2 of a yellow onion and add that when I melt my butter.
 
My Dad makes the best homemade mac-n-cheese ever!! I've made it before but it's been quite awhile so I don't remember the exact specifics. But I know it has loads of shredded cheese and butter in it! So yummy, but definitely not low-cal! mmmm now I want some and of course my Dad is on vacay in Alaska so I can't exactly call him up & ask for the recipe lol!

Speaking of... I only eat Kraft mac 'n' cheese. Sorry, ladies. No homemade for me. I love the artificial colors and preservatives rollin' around in my belly...
 
I have a GREAT one that is from the LA Weight Loss Cookbook so its lower in fat and everything. Tastes so good even my son loves it.
3 T butter
3T all purpose flour
2.5 C skim milk
freshly gound pepper
8 oz shredded reduced fat cheddar cheese
1 pound macaroni
nonfat cooking spray

1 Over medium heat, melt butter in medium saucepan. Add flour and stir until paste forms.
2 Remove from heat and add cold milk a litte at a time, stirring well with each addition.
3 Return to heat once all the milk is added and the mixture is smooth. Stire over medium heat until sauce comes to a boil and slightly thickens. Pepper to taste
4 Remove from heat and add the shredded cheese. Stir until cheese melts. preheat broiler.
5 Meanwhile, cook macaroni in rolling boiling water. Drain and toss with cheese sauce.
6 Transer to a medium baking dish coated with cooking spray.
7 Place under broiler until browned and bubbly, about 3-4 minutes.
 
Old Fashioned Baked Macaroni and Cheese

This is my favorite recipe...I don't do the topping and baking...I like it fresh from the pan. The measurements on the right are the original amounts...I cut it down since the kids don't eat this (they like plain old Kraft macaroni & cheese)...and the original recipe makes a LOT. The original recipe called for all sharp cheddar cheese...I split it between two kinds.

Old Fashioned Baked Macaroni and Cheese
Recipe by Mission Noodles Company

1 2/3 c elbow macaroni (3 1/3 c.)
2 T butter or margarine (4 T)
2 T flour (4 T)
1/2 tsp salt (1 tsp)
1/4 tsp white pepper (1/2 tsp)
3/8 tsp dry mustard (3/4 tsp)
1 3/4 c milk (3 1/2 c)
4 dash Tabasco sauce (8 dash)
1 1/2 c cheddar cheese; shredded (3 c)
1 c sharp cheddar cheese; shredded (2 c)

Topping: (optional)
1 T butter or margarine; melted (2 T)
1/4 c dry bread crumbs (1/2 c)
1/8 tsp paprika (1/4 tsp)

Cook macaroni as directed on package. Pour cooked macaroni into 3 quart baking dish. Melt butter in saucepan over low heat; blend in flour, salt, pepper, and mustard. Add milk and Tabasco, cook over moderate heat, stirring constantly, until sauce is thick and smooth. Remove sauce from heat; stir in cheese until melted. Combine sauce with cooked macaroni. Mix together melted butter, crumbs and paprika. Sprinkle crumbs over macaroni. Bake at 350 degrees F for 25-30 minutes. yum
