i love to make this one. it's a version of cosi's signature salad.
mixxed greens, pistachios (unsalted), craisins, grapes, pears, and gorgonzola cheese.
then a handmade Sherry Shallot Vinaigrette
1 medium shallot, minced (about 4 teaspoons)
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup sherry vinegar (if you can’t find sherry vinegar, substitute red wine vinegar)
½ cup olive oil
I also do a version of the greek with baby romaine, chopped tomatoes, calamata olives, cucumbers, avocado, red onion and feta cheese. I use Newman's Family Italian on mine and I'm asked to bring it every single time I'm asked to bring something.
My pasta salad is three kinds of pasta (fresh tortellini, radiatore, and tri color rotini), fresh mozzarella, arugula, cucumber, calamata olive, tomato, grilled portobello mushroom. I use Newman's Family Italian on this as well.
