Help!! Easy lunch ideas!!

We are having company for lunch after our morning meeting on Sunday, so I need an easy meal idea! Something that doesn't have to cook long or that I can make in advance and just pop in the oven for a quick warm up... OR something in the crockpot. I just have no idea what!

Suggestions needed & welcome! Oh, and if you do have a suggestion, can you mark down the ingredients/recipe so I know what to shop for? Thanks so much!
 
I don't know what youa re looking for but I just made this soup recipe and it was so yummy and easy to make. I only had half the cheese on hand and it was plenty. Maybe soup and sandwich?

Canadian Cheese Soup

1/2 cup butter
1 cup carrots, cut in 1/8-inch dice
1/2 cup celery, cut in 1/8-inch dice
1/2 cup chopped onion
6 tablespoons flour
3 cups chicken broth
3 cups half-and-half
2 pounds velveeta cheese, cut in small cubes
1 tablespoon fresh chopped parsley
pickled Jalapeno slices or roasted red bell pepper slices for garnish

Melt the butter in a stockpot or Dutch oven over medium low heat. Add the carrots, onions and celery all at once and sauté until tender. Add flour and stir until flour is blended into the butter. Cook until mixture begins to turn a light brown color (a light roux). Increase heat to medium-high and add the chicken broth a little at a time. Continue to cook and stir with a whisk until a thick base if formed. Add half and half, being careful not to let it boil. Add cheese, stirring until cubes are melted. If too thick, add more half-and-half or some milk to thin. Just before serving add parsley. Garnish with the jalapeno pepper slices or roasted red bell pepper slices.
Serves 6 to 8.
 
Buy 1 or 2 packs of those croissants in the refriderated aisle. Dice up chicken, throw it in a bowl. Add a can of cream of mushroom soup, and 1 package of cream cheese. Add salt and pepper to taste.

Open up the croissants. Spoon the mix on top of one, and place another croissant on top of it. Crimp the edges so nothing comes out. Do that to all of them.

I like to put a bit of butter and pepper on the tops too.

Bake at 375 for about 11-15 minutes until the croissants are golden.

It sounds wierd, but they are delicious and kind of casual elegant looking if you make them nicely :)

Hey Amy,
Are the croissants the ones in a roll? Do you make it as one big sheet?
 
sandwiches are always a good idea. You could get turkey and ham, somelsliced cheese and yummy rolls. Not high class but something simple and filling.

Or make some chicken salad and put them on rolls.

Though the croissants sounds yummy too!
