"healthy" apple recipes?

I have a bunch of apples that i need to use up... anyone have any favorite apple recipes that are fairly healthy? I just made some apple sauce... what else can I do?

The first thought in my mind was - just eat them plain. LOL. But, obviously, if you have a lot of them, you can't really do that. So, my next thought was dehydrate them and store them. Dried apples are yummy and they'll keep a lot longer. :) You can also use them for applesauce or something like that, but you don't have to make it now.
 
Apple crisp with less cool whip than you would normally use--now that is my idea of healthy!
 
haha... I know I used that darn healthy word! hahah... they have a new health consultant where hubby works, so hubby has to document all he eats and mostly watch carb intake... *sigh* messes with my tried and true recipes... hee hee..

I'll try some dried apples... kiddo would love those, I'm sure!
 
Baked apples are good, too. There are lots of recipes, but you just remove part of the core (leaving the bottom of it in), fill the hole with whatever your recipe recommends (often a bit of margarine, then things like cinnamon and raisins), and bake.

Another thing we do with fruit a lot is to make a plate of cut up fruits and dip them into yogurt or chocolate pudding. That's my DD's favorite lunch.
 
I chop up several apples into small bites, cook in the microwave in a bowl with a few tbsp of water over it for several minutes until soft, then add some Splenda, brown sugar and cinnamon. It tastes like apple pie filling without all the extra calories, etc :)

Ooh--I used to do this, but for some reason I forgot about it and haven't done it in a long time. I may have that with my lunch tomorrow. Thanks!
