Happy Monday

I'm just working. It's our last full week of classes, then finals start next week. :thumbup: Oh, if you only knew how much joy that brings me! Going back to work after maternity leave was so hard, so I am sooooo looking forward to summer break.
 
I think I need this recipe!
Here you go. BTW, those are someone else's notes added to it.
Easy Thai Chicken
chicken breasts (I do 1 lb)
3/4 cup salsa
1/4 cup peanut butter
2T lime juice
1 tsp grated ginger
1T soy sauce
Put chicken in crock pot, mix remaining ingredients, pour on chicken, cook on high 4 hours
I use the lime juice in a plastic lime, and the already grated ginger in a little glass jar, so this takes me 5 minutes to put in crock pot. Then cook rice or pasta right before serving. My DH and I like it spicy, but I've done it with both mild and spicy salsa, and it is good both ways. To make it more mild, I'd cut down on the ginger and add a bit more peanut butter (which gives it a creamy texture).
 
I have laundry going, just vaccumed, made my calls for the day and now feet up on couch with laptop scrapping til the buses pull up. Then scrappin some more tonight. It's a ME day.
 
I'm at work. Ugh. It's gorgeous outside and I do not want to be here.
