Freezer Meal Ideas

I've been working on pinning freezer meals so I can stock my freezer before the baby comes. I've never really done freezer cooking before, but I'm excited.

Here's the list of stuff I've found that sounds good, do you have anything to add to it?

Oh, those are good ones. We love chili.

All those I listed, most of those recipes are in the pinterest board for anyone that needs them.
 
I work through the once a month cooking book when I do a mass meal making event - haven't done it for a while... should really look into that again.

This was one of my fav recipes from that cook book..

12 boy curry

6 B/S breasts cut into strips
6 Tbs of sweet butter , divided
1 cup chopped onion
1 cup chopped celery
2-3 teaspoons of crushed garlic
1-2 Tbs curry pwdr
1 tsp dry mustard
1.5 tsp salt
0.5 tsp pepper
1 tsp paprika
1.5 cups beef broth
3 tablespoon catsup

list of other optionals: ( used as toppings when you serve)
shredded, sweetened coconut
raisin
chopped green onions
slivered almonds
mandarin oranges

saute chicken strips in 3 tbs butter until just cooked but not dry
remove and melt the other 3tbs butter and saute celery, onion and garlic
combine dry ingredients and add to vegetable mixture
stir until blended.

Add remaining ingredients and cook slightly, stirring until well blended.
Add chicken and stir.
cool and freeze


to prepare:
thaw and heat through. serve on rice.

makes 6-8 servings

I love freezing dinners! Some faves are:

Bean burritos
Chili
Cajun bean stew (and cornbread to go with it - also prepared ahead and in the freezer!)
Veggie biryani (rice dish)
Veggie burgers
Ratatouille
Veggies + tofu in sweet and sour sauce (ready to be made into a quick stir fry)
Lasagna
Spaghetti and sauce (just top with cheese to make a quick baked spaghetti dinner)
Shepherd's pie
Tomato sauce
Stuffed manicotti
Mac & Cheese (with bread crumb topping!)
Gnocchi

(We make these vegetarian, but you could make meat versions of course.)

You can freeze lots of yummy stuff for other meals too:

Breakfast foods: pancakes (layer them with waxed paper in between to make them easier to separate), waffles, muffins

Snack foods: individual soup servings, biscuits, cookies, banana bread, lemon loaf

Side dishes: rice (I keep frozen rice on hand to quickly turn into egg-fried rice), red cabbage (though you may not want cabbage if you're nursing), grilled veggies (just add to cooked pasta and saute with a simple soy sauce-based sauce), cornbread, biscuits, perogies

Oooh! Would love to hear about Vegetarian Shepards Pie! That's one dish I haven't tackled yet to make Veg!
 
Here you go, Kristi! This is a go-to dinner at our house in the winter. :)

Veggie Shepherd's Pie

3 small potatoes (3/4 pound)
2 cloves garlic, minced
1/2 tsp dried basil
2 tbsp butter
1/4 tsp salt
2-4 tbsp milk
1 medium onion, chopped
1 medium carrot, chopped
1 tbsp cooking oil
15 oz can red kidney beans, rinsed and drained
15 oz can whole tomatoes, drained and cut up
10 oz pkg frozen corn OR frozen mixed veggies
8 oz can tomato sauce
1 tsp Worcestershire sauce
1/2 tsp sugar
1 cup shredded cheddar cheese
Paprika (optional)

Topping: Peel and quarter potatoes. Cook, covered, in a small amount of boiling, salted water for 20-25 minutes, until tender. Drain. Mash gently. In a small saucepan, cook garlic and basil in butter for 15 seconds. Add to mashed potatoes along with salt. Gradually beat in enough milk to make it light and fluffy. Set aside.

Filling: In a medium saucepan, cook onion and carrot in hot oil until onion is tender but not brown. Stir in kidney beans, tomatoes, frozen veggies, tomato sauce, Worchestershire sauce and vinegar. Heat until bubbly.

Assembly: Transfer filling to an 8x8x2 inch square baking pan. Drop mashed potato topping in 4 mounds over filling. Sprinkle with cheddar cheese and, if desired, paprika. Bake, uncovered, in a 375 F oven for 25-30 minutes, until heated through and cheese begins to brown.

Serves 4.
 
Can I replace Worchestershire sauce with soy sauce? Would that make any difference?

Thank you!!! I'm lokoing forward to trying this! And Ripal--I've been able to find a vegetarian worchestire sauce at health food stores. Mine is "Robbies" brand. Here's the ingredients: apple cider vinegar, black strap molasses, water, honey, soy, tamarind, onion, garlic, shallots (spices). I bet you could come up with a creative substitution! (I would be even tempted to pop a little curry paste in there!)

Curry paste sounds good! :) that reminds me that I'm due to make my annual batch of the paste! Better get my shopping list together!
