Experimental Cooks Help Me Out

I'm trying to combine leftovers. I have a bunch of plain cooked quinoa from one meal and ginger carrot soup from another. I'm going to use the soup as a dressing for the quinoa. What veggies would mix in well with carrot ginger (heavy on the ginger) quinoa? I'm thinking sauteed zucchini and red onion, but I really only cook from recipes so I could be totally off. Help???
 
Hmmm... does it have coriander in it by any chance? Sounds yummy! I would think of it as a curry of sorts... just add veggies that you would typically find in a ginger-heavy curry dish.

Onions or Shallots
Chunks of potato
Fresh spinach
Broccoli
Snow Peas
Water chestnuts
Cashews
Zucchini
 
I'd make a quinoa salad and have the soup on the side personally. I like bell pepper, black beans, and corn or broccoli in my quinoa
 
I can totally see adding the quinoa in the soup... almost like you would add barley or some other grain. And Meghan's suggestion of bell pepper sounds great.

Yep Meg the quinoa is left over from a corn and black bean salad I already have in my fridge. It's yummy :)

yum! I got addicted to quinoa salads this summer. So good!
