dinner help

ok, so my hubby bought a two-pack of whole chickens, and didn't separate them before freezing them. They are both defrosting in my fridge as I type (have been since Saturday afternoon, it takes a while for my fridge to defrost food apparently).

How should I cook them? Normally I chop up the whole chicken and cook it that way, but I don't feel like sharpening the knife. lmao And I can't BBQ, it is pissing down rain here and isn't supposed to stop before Wednesday. So it has to be done via the oven.

Hit me with your ideas! Please? hehehe
 
Yep, roast them! A little olive oil and some herbs and some time in the over and it's all good.
 
Yeah what they said... :) I too need dinner help... anyone want to come over and help me figure out what the heck to cook and how? :P
 
who wants to cook me dinner. I went grocery shopping today and NOTHING i bought looks in the least bit appetizing...

I know how to help!! First thing you will need is a phone. This is very important. Then all you do is find a phonebook, search under pizza and dial the number. You will then have food magically delivered to your door step in about 30-40 minutes. Try it!

Yup, Roast them and then use leftovers to make one of our favorites:

Low-Fat Sour Cream Chicken Enchiladas
8oz Container Light Sour Cream
8oz Container Non-Fat Plain Yogurt
1 can Cream of Chicken Soup (low sodium)
4oz can diced green chiles
8-10 flour or corn tortillas
1 ½ C Cooked Chicken, Chopped
1 ½ C Shredded Cheddar Cheese, Reduced Fat
¼ C sliced green onions
Lettuce (garnish)
Tomato (garnish)

Heat oven to 350 and grease a 13 x 9 in. baking dish. Combine the sour cream, yogurt, chicken soup, and green chiles in a bowl. Mix well. Spoon about 3 T of the sour cream mixture down each tortilla shell. Divide the chicken, ¾ cup of the cheese and onions and put on top of the sour cream mixture in each shell. Roll up the shells and place in baking dish. Use the remaining sour cream mixture and spread it on top of the shells. Cover with foil and bake for 25 to 30 minutes or until hot and bubbly. Remove foil and sprinkle with remaining cheddar cheese. Bake for 5 minutes. Garnish.
