Cooking: Convection Ovens

Hi gals! The new house we just moved into has a fancy range in it. The oven has two modes: regular and convection. Having lived in apartments all my life, I've never had anything this fancy!

I LOVE to bake and can't wait to start churning out cookies, cakes, and pizzas!

I"m curious about your exerpience. Do you use a 'convection' baking mode? For what type of items? Baked goods? Pizzas? Bread? Casseroles? Anything? Does it alter cooking times? How about the temperature settings? Will the regular ones from the recipe be OK? Any other tips? Advice?

I have used the convection feature on my oven a few times, but I have never used it for cookies or anything like that. It has worked great for cooking more than one pizza at a time. For my oven, if you put it on the convection setting and enter the normal temperature, the oven automatically adjusts it down by 25 degrees. The cooking time can be slightly longer, but you just have to watch it and take it out when it's finished.

If you come across any great tips, I'd love to hear them. :D

I use the convection on my oven ALL the time. Not sure if I have any tips, but I find it cooks much more evenly. I havent had to adjust the time on too many things. You can also pop things in (anything except baking) without pre-heating.
