Christmas Breakfast?

I am looking for a new menu for Christmas morning...

Ideally, I would LOVE something I could make the night before and then just put the finishing touches on/bake in the morning. What do you guys eat on xmas morning??
 
well last year I was really sick so I made Christmas breakfast with help from MIL and skipped any other food at all, all day. We had eggs, biscuits, gravy, sausage, bacon, cottage cheese, cinnamon rolls, fried apples, and pancakes with maple syrup. I'll never do that again LOL!

Normally I put oats for oatmeal with tiny fresh cut up apples, cinnamon and sugar in the crock pot the night before, OR we'll get donuts in advance the day before, like Krispy Kreme :D
 
Our tradition is to have breakfast burritos. Yum!

When we still all gathered at mom & dad's house, one of my brothers would always volunteer breakfast duty and start making us either omelettes or pancakes and eggs (depending on the brother) as soon as we were finished opening gifts. *sigh* I miss those days. :(

These days one of our favourite things to do is stock up on bagels to toast, lox (smoked salmon), cream cheese, red onion and capers. It's super yummy, easy to do self-serve and nice and filling. And very little mess or work for anyone to deal with. I need to go check out that french toast casserole recipe though... sounds very nummy! :)

Caramel-Cranberry-Apple Pull-Aparts
4 Nature Valley Pecan Crunch Granola Bars, crushed (3/4 c.)
1/2 c. chopped pecans
1 tsp. ground cinnamon
1 c. whipping cream
1/2 c. packed light brown sugar
2 cans (17.5 oz each) Pillsbury Grands! Flaky Supreme refrigerated cinnamon rolls with icing
1/4 c. unsweetened dried cranberries
1 med. granny smith apple, peeled, coarsely chopped (about 1-1/4 c.)

Heat oven to 350. Spray 12 cup fluted tube cake pan with cooking spray. In a small bowl mixed crushed granola bars, pecans and 1/2 tsp. of the cinnamon. Sprinkle mixture evenly in bottom of pan.

In large bowl, mix whipping cream, brown sugar and remaining 1/2 tsp. cinnamon. Separate cans of dough into 10 rolls. Set icings aside. Cut each roll into quarters. Stir roll pieces, cranberries and apple into whipping cream mixture to coat. Spoon mixture into pan; spread evenly.

Bake 50 to 60 minutes or until deep golden brown. Immediately place heatproof serving plate or platter upside down over pan. Turn plate and pan over. DO NOT remove pan. Cool 5 minutes. Remove pan. Scrape any remaining topping in pan onto coffee cake. Cool 5 minutes longer. Drizzle with icings. Serve warm.


or, if I feel lazy I will make my MIL's Blueberry French Toast
You can substitute the blueberries with any kind of berry you like. :)

1/2 c. flour
1-1/2 c. milk
1 tbsp. sugar
1/2 tsp. vanilla
1/4 tsp. salt
6 eggs
10 slices french bread cut into cubes
1 3-oz. pkg. cream cheese cut into 1/2" cubes
1 c. fresh or frozen blueberries
1/2 c. chopped nuts

Grease 13x9 pan. Beat flour, milk, sugar, vanilla, salt & eggs until smooth. Stir in bread until coated. Pour into pan. top evenly with cream cheese, blueberries and nuts. Cover and refrigerate up to 24 hours.

*If you refrigerate this overnight, be sure to let the pan sit at room temp for at least 30 minutes prior to baking so you don't break your dish (assuming you are using glass or stoneware).

Bake at 400 uncovered for 20-25 minutes or until golden brown. Sprinkle with powdered sugar. Serve with warm syrup (I usually melt butter in with my syrup).

We just usually have pancakes or something like that, but my mom always makes Ham & Cheese Strata (she calls it Brides Breakfast)...it is SO good, but we aren't there on Christmas morning so we always miss it. Next year we will be living in the same town so I'll get to do everything I normally miss!

16 slices bread, white or brown

We don't have a traditonal breakfast, but my youngest has requested we have cinnamon rolls. We do have pizza as a traditional Christmas Eve dinner though!

According to my kids, I *HAVE* to make my "famous" cinnamon rolls every year!

*snorts* 'cause they are just Pillsbury cinnamon rolls (you know, pop them open and throw in a round cake pan LOL
 
The Chocolate Santa from my stocking!!! You mean your alls mom's don't let you eat chocolate on Christmas morning!?!?! What a meanie!!! :p :D :D

Normally we have monkey bread (from Walmart's frozen case) but this year I think I'm going to make homemade cinnamon rolls!!!
 
I love our Christmas morning breakfast, mainly because I don't have to cook it LOL.
DH makes buttermilk waffles from scratch, and probably have eggs, bacon or sausage, and some fresh fruit out as well.
 
I always make cinnamon rolls while the kids are opening up their stockings, etc.

The family arrives later in the morning for brunch. I usually do a french toast bake, omelet thingie (baked), and fruit salad.
 
We do breakfast casserole (eggs, ham, cheese, hashbrowns - it's awesome) and I usually have juice, coffee (lots), and some kind of rolls. The casserole bakes while we open stockings and such. Works great!
 
We do "kolaches".
Take Pillsbury crescent rolls (the ones that come 8 to a package - just regular, not extra anything) and split each triangle in 1/2 (you end up with 16 skinny triangles).
Sprinkle with grated cheddar cheese.
Put a Lil Smokie on top and roll up.
Cook in the oven per package directions.

You can make them up the night before and keep in the refrigerator.
 
Egg & Sausage Casserole:

1 pound ground sausage
2 1/4 cup milk
10 eggs
1 1/2 tsp dry mustard
1/2 tsp salt
1 1/2 cup shredded cheddar cheese
3 slices or 2 cups bread cubes

Heat oven to 350 degrees. Brown sausage and drain well, set aside. In large bowl combine milk, eggs, mustard and salt. Beat 1 minute, medium speed, stir in cheese, bread and sausage. Pour into ungreased 9x13 baking pan. Bake 30-40 minutes or until knife comes out clean.

TIP: Prepare, cover & refrigerate overnight instead of baking right away. Bake uncovered 40-50 minutes at 350 degrees.

We TOTALLY do this. Always did growing up too. I love it. Easy and yummy (and uh, healthy....)
 
Well I often make LuAnn's famous cinnamon rolls. ;)

This year, we aren't doing a Christmas "dinner" on Christmas day (cause dh has to work), so I'm gonna do a special breakfast instead. I'll make this ham, egg, & cheese braid (from pampered chef). This is something I used to take to work every time we'd have food day, and people DEVOUR it.

Ham 'N Eggs Brunch Braid
(More Stoneware Sensations Cookbook...pg 28)

4 oz cream cheese
1/2 cup milk
8 eggs, divided
1/4 tsp salt
Dash ground black pepper
1/4 cup red bell pepper, chopped
2 Tbls sliced green onions with tops
1 tsp butter or margarine
2 (8 oz) pkg refrigerated crescent rolls
1/4 lb thinly sliced deli ham
2 oz cheddar cheese, shredded (1/2 cup)

Preheat oven to 375°F. Place cream cheese and milk in Classic Batter Bowl. Microwave on HIGH 1 minute. Whisk until smooth using Stainless Steel Whisk. Separate 1 egg using Egg Separator; reserve egg white. Add the yolk and remaining 7 eggs, salt and black pepper to Batter Bowl; whisk to combine. Chop bell pepper using Food Chopper. Add bell pepper and onions to egg mixture. Melt butter in Generation II 10 inch Frying Pan over medium low heat. Add egg mixture; cook, stirring occasionally, until eggs are set but still moist. Remove pan from heat. Unroll 1 package of crescent dough; do not separate. Arrange longest side of dough across width of Rectangle Baking Stone. Repeat with remaining package of dough. Using Baker's Roller, roll dough to seal perforations. On longest sides of Baking Stone, cut dough into strips
1 1/2 inches apart, 3 inches deep using Paring Knife (there will be 6 inches in the center for the filling). Arrange ham evenly over middle of dough. Spoon eggs over ham. Shred cheddar cheese over eggs using Deluxe Cheese Grater. To braid, lift strips of dough across filling to meet in center, twisting each strip one turn. Continue alternating strips to form a braid. Brush lightly beaten egg white over dough using Pastry Brush. Bake 25-28 minutes or until deep golden brown. Cut into slices with Slice 'N Serve.

Makes 10 servings
 
We always have a french toast casserole. I pop it in the oven when the kids get up and it's done by the time they finish opening. I make a different one every year but my favorite is blueberry. They have some good ones at www.allrecipes.com

We have French Toast casserole. It's made the night before and put in the fridge and I pop it in the oven when we wake up and by the time we are done opening gifts (or ready to take a break since DD takes forever to finish), it's ready to eat. It's sooo yummy, too!
 
We have the Breakfast casserole like Melinda's recipe. I also tried another one this year, which I might try for Christmas morning, that has hash browns in it.

Breakfast Casserole (with potatoes)
½ lb. pork sausage
1 medium onion chopped
4 cups hash browns, thawed (16 oz)
1 ½ cups shredded Monterey jack or cheddar cheese
3 eggs beaten
1 cup milk
¼ tsp pepper
In large skillet, cook sausage and onions, breaking up sausage. Drain fat. In a 8x8x2 baking dish, layer potatoes, half of cheese, sausage and onion mix, remaining cheese. In a bowl, combine eggs milk and pepper. Pour over cheese, etc. Bake covered in 350 F oven for 45-55 minutes or until knife near the center comes out clean. Cut into squares. Serves 6.

I left it overnight, cooked it in the morning and it was a hit at work when we had food day....

This is basically what we do too...we have something small like cinnamon rolls right after we open gifts, and then I get started on the extravaganza that is brunch here (we do that instead of dinner). I make eggs, bacon, sausage, pancakes, danish, muffins, fruit...um...and a lot of other stuff...LOL.

Mommy does Christmas breakfast. Egg casserole, hot fruit, cinnamon cream cheese monkey bread, some potato thing and mimosas. :)
 
Last year I think I made a baked French toast recipe Gina Miller had posted at DST. I suppose I will make it again if I can find the recipe :unsure: b/c Mr Picky Henry actually ate it!
 
We always have Gingerbread Waffles with fruit topping and some kind of meat. Usually sausage. Sean opens all the gifts while I make breakfast.

Gingerbread Waffles

3 cups all-purpose flour

4 teaspoons baking powder

2 teaspoons ground cinnamon

2 teaspoons ground ginger

1/2 teaspoon freshly grated nutmeg, eyeball it

1/2 teaspoon salt

4 large eggs

2/3 cup packed dark brown sugar

1 cup canned pumpkin puree

1 1/4 cups milk

1/2 cup molasses

1/2 cup (1 stick) melted butter, plus some to butter the iron

Syrup, whipped cream or fresh fruits for topping, to pass at table


Preheat waffles iron.

In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.
 
I had an awesome baked french toast thingie to make but my family turned up their noses at a real breakfast.

A cassarole sounds so yummy right now but our tradition is for hubby to make crépes. YUM! He makes the batter before we go to bed Christmas Eve and then goes to town after we open gifts. We each have one with ham & cheese for a little nutrition... then it's no holds barred... nutela, chocolate, bananas, strawberries, whipped cream, butter & sugar... whatever we want. It's fun.
 
if you all like casserole. this one is good! sooo super easy and can be chilled overnight and ready for you all first thing in the morning. :thumbup: i like to add veggies of some kind or at least some fresh chives. yummm.
 
We used to do pancakes but we've moved to breakfast strata

12 slices firm white bread, cubed
1 pound cooked & crumbled bulk sausage
2 cups sharp cheddar cheese, shredded (low-fat okay, but fat-free does not work!)
6 eggs
1 can Carnation Evaporated Skim milk
½ tsp. salt
¼ tsp. dry mustard (optional)
½ stick melted butter or margarine (butter your pan, then melt the rest)

Butter a 9x13 glass baking dish.

In large bowl, toss bread cubes, meat and cheese.Beat eggs until foamy and add milk, dry mustard and salt, beating again with eggs. Add to the bread mixture in the bowl and toss together, until the ingredients are evenly mixed and the bread is fairly coated with the egg mixture. Pour mixture into buttered baking dish. Pour melted butter evenly over the top.

Cover tightly and refrigerate overnight.Uncover and bake in a preheated oven at 325º for one hour.

Serves 6

* 4 large tart Apples, peeled, and sliced
* 1 tsp. Cinnamon
* Sugar to taste
* ¾ cup Brown Sugar
* 3 tbsp. Light Corn Syrup
* 3 tbsp. Butter or Margarine
* ¾ cup Walnuts or Pecans, chopped
* 12 slices firm White Bread
* 3 Eggs, beaten
* 1¼ cups Skim Milk
* 1 tsp. Vanilla.
* ¼ tsp. Nutmeg

Place apples in a medium-size skillet. Pour ½ cup water over apples. Simmer 4-5 minutes until apples are softened.

Drain apples in colander. Place in a bowl and gently mix in cinnamon and a little sugar if apples are too tart. Set aside.

In the same skillet, combine brown sugar, corn syrup, and butter. Cook and stir over medium heat until sugar melts and mixture just begins to come to a slow boil. Pour into a 13x9-inch baking dish. Sprinkle with nuts.

Place 6 slices of bread on top of syrup and nuts. Divide apples among bread slices and top with remaining 6 slices.

Whisk together eggs, milk, vanilla, and nutmeg. Pour over "apple sandwiches." Cover and refrigerate over night.

In the morning, preheat oven to 325º and bake uncovered for 40 minutes.

Remove from oven, cover with a serving platter, and invert. Cut each sandwich in half diagonally and serve with vanilla sauce.

Vanilla Sauce

* ½ cup Sugar
* 1 tbsp. Cornstarch
* 2 tbsp. Butter or Margarine
* 1 tbsp. Vanilla

Mix sugar, cornstarch, and 1 cup water in a small saucepan. Cook, stirring often, over medium heat until thick and bubbly.

Remove from heat, add butter, and vanilla. Stir until butter melts.
