chicken enchilada reciepe

I need a good recipe for chicken enchilada's. I made beef ones last night and they were really missing something. No flavor or filler really. The recipe I found for the beef ones just had beef browned added to 3/4 cup enchilada sauce and 1/2 cup cheese. Put filling into flour tortilla shells roll up and place in baking dish pour remaining enchillada sauce on top and sprinkle with remaining cheese. I added onion to the beef while browning and green chillis to mine to make spicy, hubby doesn't like spicy. I didn't think they were spicy at all hated the chillis next time I will add jalopeno's to make it spicy, so can I have your tried and true recipes.
 
I made these last week and DH RAVED about them..and for him that's big lol. They really were very very good. I think the cream cheese made them..it was so yummy.

If you don't mind a little work, these are awesome! I get requests for them every time we're having people over for dinner. :thumbup:
 
I make ones for my family all the time where I just use the canned chicken, some cheese and enchilida sauce. They seem to really like it. Had to add it to the regular menu. I make my cheese, but its all about the sauce for me. There was a fantastic one at Target, but they stopped selling it. It was their brand.
 
Mine are Green Chile Chicken Enchiladas:

3 c. cooked diced (or shredded) chicken
2 c. pepper jack cheese, shredded (you can use Monterrey jack if you don't want spicy)
1 can cream of chicken soup (or use 1/2 can soup and 1/2 block of cream cheese)
1 large can diced green chiles
Tortillas
Green Enchilada Sauce (I prefer LasPalmas medium)
Sliced Black Olives

Combine cooked chicken, cheese, and soup in a large bowl. Mix well. Place good amount in tortilla & roll up. Place in 9x13 baking pan. Top with Green Enchilada Sauce. Sprinkle with a little extra cheese. Top with black olives. Bake at 350 for about 45 minutes or until hot and bubbly.

I serve with homemade spanish rice and canned (Taco Bell) refried beans.
