Does she know PS already? I would probably send her some tutorials and then offer to answer any questions she might have.
The PC vs Mac thing wouldn't be a big deal since the program essentially is the same, except for the shortcuts. But if she doesn't already know how to use PS, I think it would be confusing for you to try to explain using only PSE since PS is a bit more complicated.
