to mention I was back. While we were in Whistler we hit Araxi Restaurant all you Hell's Kitchen Fan' should know that this seasons winner will become a head chef there. Anyway thought I would share some of the food we had while there.

So here is what we ended up eating it was a 3 course menu for $45 a person we did get a cocktail each and then a bottle of our fav. wine so it wasn't a cheap dinner by any means but it was fun.

Appetizer:

Pemberton Meadows Beef Carpaccio
wild arugula, truffled pecorino and organic olive oil
spiced crostini and North Arm horseradish
$17.50

Chan got:

Chilliwack Corn + Basil Soup
wild smoked sockeye salmon in nasturtium
vegetable and red pepper crust
$12.50

Chan had Gnocchi but I can't find it on the menu to post exactly what was in it.

Wild Mushroom Risotto
assorted mushrooms, white wine and pecorino romano
fried herbs and toasted almonds
$27.50

I got:

Gem Lettuce Salad
with local german butter potatoes
goat’s cheese fonduto and shallots
mustard seed vinaigrette
$14.50

Moonstruck White Grace Cheese Souffle
fresh laurel and parmesan cream
toasted almonds and baby frisee
$17.50

Sloping Hills Pork
slow cooked belly and lightly smoked tenderloin
baby green beans and cauliflower puree
$29.50

Shared dessert:
Lemon Tart
Okanagan goat cheese ice cream
blueberry coulis and honey-lemon madeleines
$11.50
 
I would love to go there if we ever get to Whistler ... love that they use local foods in their dishes!!
