My hubby is doing Atkins and I'm doing WW so I'm trying to cook where we can both eat the same thing....sometimes it's very hard. Lots of lowfat meat dishes and veggies.

I have those quesadillas at least twice a week for lunch lol..I try and only eat half..I think 7 points i a lot for lunch for me

anyways I like the low carb spinach wraps for mine So good!

I made this one the other day, so, so good.
main meals


15 Minute Vegetarian Chili

POINTS® Value: 6
Servings: 4
Preparation Time: 7 min
Cooking Time: 8 min
Level of Difficulty: Easy

Stock up on canned beans, corn and tomatoes for super-fast, one-pot meals.


Ingredients

1 tsp canola oil
1 medium garlic clove(s), minced
14 1/2 oz stewed tomatoes
15 oz canned kidney beans, rinsed and drained
15 1/4 oz canned yellow corn, drained
15 oz canned tomato sauce
1 Tbsp chili powder
1/2 tsp dried oregano
1/2 tsp crushed red pepper flakes
1/4 cup(s) dehydrated onion flakes
1/4 tsp black pepper
4 Tbsp low-fat shredded cheddar cheese, sharp-variety

Instructions
Heat oil in a large, nonstick, heavy-bottomed pot over medium heat. Add garlic; cook, stirring frequently, until aromatic, about 2 minutes. Add tomatoes, beans, corn, tomato sauce, chili powder, oregano, red pepper flakes, onion and pepper; stir well.


Increase heat to high and bring chili to a boil; cook, stirring frequently, until chili is thick and flavors are concentrated, about 5 minutes. Spoon into serving bowls and sprinkle with cheese. Yields about 1 1/4 cups chili and 1 tablespoon cheese per serving.


I made this as a nice Sunday brunch one day. Course it was too filling, I only ate half the bagel with the topping.

Apple Crumble Topped Bagel
POINTS® Value: 6
Servings: 2
Preparation Time: 8 min
Cooking Time: 3 min
Level of Difficulty: Easy

Turn your bagel into a rich breakfast treat with our creamy apple and cinnamon topping.


Ingredients

2 item(s) cinnamonaisin bagel
1/2 cup(s) dried apple(s), chopped
1 Tbsp packed light brown sugar
1/2 tsp ground cinnamon
1 Tbsp reduced-calorie margarine, melted
2 Tbsp fat-free cream cheese

Instructions
Toast bagels.


Meanwhile, stir together apple, sugar, cinnamon and margarine.


Spread bagel halves with cream cheese and sprinkle with apple topping. Yields one bagel per serving.

This was super easy and good.
Vegetable Fritters
POINTS® Value: 3
Servings: 4
Preparation Time: 15 min
Cooking Time: 25 min
Level of Difficulty: Moderate

For a picture-perfect presentation, top these vegetable fritters with salsa or fat-free sour cream, then sprinkle with minced chives.


Ingredients

1 cup(s) all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp sugar
1 large egg(s), beaten
1/2 cup(s) buttermilk
1 medium sweet red pepper(s), cored, seeded and quartered
6 medium mushroom(s), trimmed and coarsely chopped
1 small onion(s), trimmed and quartered
1 Tbsp chives, minced
2 large egg white(s), beaten until stiff
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste

Instructions
In a large bowl, stir together flour, baking powder, baking soda and sugar.


In a small bowl, stir together egg and buttermilk. Stir into flour mixture.


By hand or in a food processor, mince together pepper, mushrooms, onion and chives; add to flour mixture. Gently fold in egg whites. Season to taste.


Warm a large, nonstick skillet coated with cooking spray over medium heat. Drop fritters by heaping tablespoons onto skillet, allowing an inch between fritters. Cook 3 to 5 minutes on one side, flip and cook until cooked through, about 2 to 3 minutes more. Yields about 5 fritters per serving.

I have an old mushroom barley recipe I love from a WW 15 minute meal cookbook...but it's points, not points plus so I'd need to convert it. It's super yum though! I'll see if I can rummage it up.
