Can you give me your best Cupake Icing recipe?!??!

I'm looking for something really light and fluffy (kind of like whipped cream) maybe something I can add color to and not too sweet. Anyone?!?? :) TIA!!
 
I was going to give you a buttercream recipe...not light and fluffy at all LOL. I realy do not like whipped topping so I guess Im no help.
 
i LOVE LOVE cream cheese frosting!! I use this one and its so yummy, its fairly light, but not really fluffy i guess, lol. i like that site, cause it will adjust the recipe according to how much you need, where it says calculate
 
i just went to see her recipe La, and it's the same one I've been making for over 20 years. My girlfriend made a cake for one of my baby showers and used it (she's an amazing baker) and I had to have the recipe...I make it ALL the time. Definitely try it...it doesn't sound good, but I promise it's amazing...so light and not too sweet!

So yeah...make Deanna's. She saved me from digging out my recipe!!
 
NO!! You have to try it. I don't strain mine. I just make it until it's thick and then chill it. Beat the butter and sugar, add the rest and beat beat beat! It's so easy and I swear it's the best tasting ever!

1 tsp vanilla

ETA: Although I wouldn't say it is like whipped cream. It is fluffy.

It's my youngest boy's birthday the 13th of this month and I am sooo trying that Our Best Bites recipe! I have had the cupcake stand and the frosting pouch for a couple of years, but just haven't had the guts to make cupcakes. :p

this is basically the same as buttercream frosting...my favorite frosting. I got my recipe when I was a kid from my mom's Betty Crocker cookbook.

ya, the only difference I think is the shortening which makes it lighter than the buttercream. I use the buttercream one too, which is the one my mom used from the Betty Crocker cookbook :p
 
I just tried the frosting recipee in the back of Hello, Cupcake! last night and it is amazing, and really easy to make.

Almost Home-made Buttercream Frosting

1 16 oz. jar of Marshmallow Fluff
3 sticks of unsalted butter, room temperature
1 tsp. vanilla extract
1/2 cup powdered sugar

Cut up butter into tablespoon cubes. Put Fluff in electric mixer and start mixing on low speed. Add butter one tablespoon at a time, mixing thoroughly, and scraping down sides of bowl. Add vanilla and sugar and mix well.

The hardest part is scraping the marshmallow fluff out of the jar! It's sooooo good, holds it's shape amazingly well, and is light and not too sweet. Used it to make the sunflowers from her book last night. I'm in love with it!

Ok, I'm gonna try that recipe too, but I just went to get it, and it says "3T Flour", and "1t vanilla extract". Do they mean teaspoons or tablespoons?

Oh Cindy!! I'm glad you tried it! It really isn't hard and it is so divine!!! I actually made my friend make it for me several times (whenever we had to go somewhere and bring desserts, I'd call her), and then she finally gave me the recipe and told me to make it myself! I was shocked when I saw "how" it was made, but it's the bomb!! Yes La!! You have to try it!
