ISO 9x13" Coffee Cakes & Breakfast Casseroles

I have this WON-DER-FUL product...highly highly recommend it. I love it!

I have been making brownies and coffee cake (Betty Crocker) in it and absolutely love it!

I have been making something for my 20yo ds' meetings at college every week and have not only been nominated as "favorite mom" but "honorary member" of their group. :w00t: hee hee hee

I am looking for some EASY to throw together coffee cakes and breakfast casseroles that go together really quickly that I can bake in the morning before his meeting. It needs to bake in a 9x13" pan.

Please help me retain my status. :p ;) Thank you!!

P.S. My son doesn't like vegetables....

You can make this breakfast casserole. I never use measured amounts of anything, but I'll put some approximates of what I usually use...

8-12 eggs (depending on how many people you're serving- usually 1 or 2 per person
1/2 cup of milk
3/4 cup pancake mix
1 can of cut mushrooms (if you like them)
1 box of sausage links, cut them up into small pieces
onion & garlic powder (or chopped pieces) to taste
(whatever spices you like- I usually put a lot of parsley & dill weed in it)

put it all in the pan and mix it up, bake it at 350... I usually bake it for 1/2 and hour but you'll need more time if you make a lot- but in that pan you linked us to, it may be quicker, I don't know because I haven't used one of those pans before.

You can also add diced up green, yellow, and/or red peppers and a little cheese. I personally stopped adding cheese because you can't really taste it that much and it just adds fat & calories that you can't taste... so why bother :)
 
Apple Nut Coffee Cake

Beat together:
2 eggs
1/3 C. oil
1 tsp. vanilla
1 C. vanilla yogurt

Add:
2 C. flour
1 C. sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp salt

Add:
2 medium/large chopped apples

spread that in a 9x13" pan (batter is pretty thick)

Mix together:
1 C. packed brown sugar
1 tsp. cinnamon
2 Tbsp. melted butter

sprinkle that on batter. Add 1/2 chopped walnuts to top if desired.

Bake: 350 degrees 35-40 minutes or until toothpick comes out clean.
 
There's many different recipes out there for this, but we make Ham & Cheese Strata every Christmas eve to eat on Christmas morning...the one we use calls for green onions but it's only to sprinkle on the top. The rest is just eggs, bread, back bacon/ Canadian bacon & cheese pretty much. Google it to find one that sounds good to you...it's yummy and is usually baked in a 9"x13" casserole dish!

Breakfast Casserole or Strata

It's best to put it together the night before and let it sit overnight in the fridge. Then just pop in the oven the next morning.

8-10 slices bread
7 eggs
1 tsp. salt
1 cup shredded cheddar cheese
1 lb. spicy sausage
2 cups milk
1 tsp. dry mustard or 1 tbsp. dijon mustard

Cube or pinch bread slices, using the crusts.
Cover the bottom of casserole dish.
Cook sausage until crumbly, drain.
Beat eggs, milk, salt and mustard.
Top bread cubes with sausage, then cheese, then pour egg mixture over top.
Refrigerate overnight.
Bake at 350 degrees for 45 minutes or until top is brown and bubbly.
 
Jackie, that's pretty much what I make except I put crumbled Corn Flakes sprinkled with melter butter and chopped green onions on the top (put on right before you bake it) and the aforementioned back bacon instead of sausage:)

I showed this to my son...he thinks it will taste great...he was asking about maybe using bacon in it. He said this is a definite! TY!

Ohhhhhhh I love the thought of making it up the night before! That would really be wonderful!!

This "morning meeting" that my son goes to is a "Second Life" or some kind of virtual world...he is helping develop the Devry University area of it. So the people that are coming in to the meeting are students coming in on their own time and a few of the teachers at the school. I thought sending food might increase the people that will come in and help my son with this project!

I told my son last night at bedtime that I would check this thread this morning. He said he thinks it would be fun to make me an avatar (animated person) that would walk into the "meeting" online carrying a pan of brownies or whatever I made that morning and offer it to the people virtually...and then he'd pull it out of his bag. :thumbup:
 
Bumping! any more great ideas? I'm going to try one of these recipes for breakfast in the morning...but I get the nerve to send something "new" to my son's team meeting!

BTW they think I'm great...they are even going to get me a t-shirt for their team since I send food every Thursday morning!

Ok this one is in the frig for tomorrow morning...except I used bacon instead of sausage because my tummy just doesn't seem to care for sausage even though my mouth does!
 
You could make all kind of quiches/tartes/frittatas (Usually they all can be eaten cold, so you can make them the night before) in this - who says they have to be round? :D And how about Banana Bread/ Carrot Cake with cream cheese frosting?

Now I have to find out if this product is available in Australia, I guess not :thumbdown:

I'm not too fancy of a cook so I don't know how to adjust for different sized pans...and my son is a pretty "basic" eater..lol.

Wonder how I would adjust my basic banana bread recipe to go from a loaf pan to a 9x13?

Will QVC ship to Australia?

I have used my pan twice this week already! Once for one of the casseroles here and for brownies! Love it!
 
I couldn't believe how easy this was to make and how good it was! I just substituted torn up pre-cooked bacon in place of the sausage! Thank you for the recipe...it will be fixed again to bake Thursday morning! :thumbup:

Hmm, I don't know, guess you could double the amount for the recipes?

Don't know if they ship to Australia, might have to check.
