anyone got a good, quick, throw it together with what's in the house chicken recipe?

I've got some chicken breasts thawing now and I'm just at a loss for what to do with them. I usually just make chicken a la Laura (throw in whatever spices are in the cabinet and bake it) but I was thinking maybe I'd go for an actual recipe tonight. :p
 
you could chop them into nuggets and fry them :)

Quick and easy - pour a little milk in a bowl, some flour in another bowl..dip in milk then coat in flour then deep fry about 10 minutes. We fight over them in my family lol
 
oh I have some chicken to cook too and will keep my eye on this thread. I'm pretty stocked with what I have to choose from just feeling lazy :0/
 
Chicken Fajitas? (onion, bell pepper, seasonings - some salsa and sour cream if desired.) Quick and easy.

Chicken, sprinkled with oregano, salt and pepper. Fried in a little olive oil until done. Mix can of black beans (drained & rinsed) and diced tomatoes - undrained (I like the green chile or jalapeno ones) together. Pour over the chicken and heat up. Top with a little cheddar cheese. (If you use lowfat cheese, it's a WW recipe and only 5 pts. for a whole breast with 1/2 c. of the beans/tomato mixture).
 
My stand by is always chicken parm. Throw some sauce on top, sprinkle with some cheese, and bake it up.

Hahahahahaha, that's the easiest though! You don't have to stand over and watch it cook, you just chuck it in the oven! Lol!

We haven't had chicken parm in FOREVER. Jordan hates using the oven during the summer. Especially on a day like today when it's almost 100 out, lol.

pretty sure that's my problem..i HATE cooking in the summer

Ummm, that would be chicken a la Heidi!!! LOL!!! :p I HATE cooking! Baking I love, cooking ... yuck.
 
We had the BEST chicken this weekend... and my neighbor was embarrassed to give me the recipe, it was so easy!

1/2 cup grated parmesean cheese
1/2 cup italian salad dressing
1 clove minced garlic

Combine all three-marinate chicken in sauce for however long, then bake- you can throw the extra marinade on top, if there is any. Seriously, so tender and good!
 
dip chicken in melted marg or butter (we like to cut chicken to bite size)...press into crumbled cheez its and bake. YUM Ok going to have to thaw out some chicken breasts...this is one of the FEW things the whole family likes!

we also like the mccormick montreal chicken seasoning (dry mix)...it's very good on grilled chicken!

tonight I just took that leftover chicken with that seasoning...sliced it up...made chicken gravy (also from mix) and poured over 'pierogies' we had in the freezer. eating that right now...kind of a comfort food
 
I used raw chicken and it turned out BEAUTIFULLY. Dh gobbled it right up...as well as the girls. Emma kept saying, Mom...this sauce is SO good! lol
 
got bread crumbs, chicken broth, mushrooms and cheese??

what we call Mozzerella Chicken. coat the chicken in bread crumbs and brown in a pan. place in a baking dish. cover with sliced mushrooms, slices of mozerella cheese (may substitute if you like), pour about a cup of chicken broth over top and bake for about 30 min. delish!

Thanks! I'm making this for dinner (along with some buttered baked rice).
 
I haven't tried this on chicken (but it is GREAT on porkchops)

1c. Cola (not diet)
1c. Ketchup
3T. brown sugar

Mix and pour over chicken. Bake at 375 until done.

We also like chicken nuggets.

Cut chicken into nugget sized pieces. Dip in beaten egg (with a splash of milk). Dip in crushed Sour Cream and Onion Potato Chips and bake at 375 until done.
Serve with Honey Mustard.

First let me preface this by saying that if you haven't read my blog or gallery I consider myself to be a bit "cooking challenged" but I'm trying to learn.

OK here goes:

I wasn't sure that there was enough marinade for the amount of chicken I was making so I doubled the recipe. (In hindsight, I could have maybe increased it by 50% but doubling wasn't necessary). I was also trying a recipe for butter baked rice for the first time too. That one I didn't understand so after 35 minutes or so when the rice was not plumping up I threw it out and started over thinking I must have done something wrong. (Again in hindsight, this recipe sort of double cooks the rice so it will turn out ok in the end. Needless to say, dinner was running quite late last night with me almost giving up).

I also made the mistake of marinating in the glass casserole. I didn't take into account that I couldn't put such a cold glass dish right into a hot oven without risking that it would break. This meant more dirty dishes because I then needed to transfer the chicken to another casserole. Add in a few spills of chicken broth from the rice going into the hot oven which resulted in smoke billowing through the kitchen. [I told you. I am "cooking challenged"].

Since I had a good amount of marinade I think the chicken was sort of frying in it -- it was very juicy, though! I also used fresh grated parmesean which made a nice crusty cheesy effect on the top of the chicken. I did take what little leftovers we did have (was it that good or were we all just so freaking hungry by the time it was ready?:D) and cut the chicken into small pieces and mixed with the leftover rice to reheat for lunch today.

All in all, I will try it again, hopefully bypassing my delays and mistakes.

I'm want to try some of the other recipes that people have posted. I just have to work up the gumption to try again.
 
I think she used grated, rather than shredded, parmesean, so it sort of melded into the italian dressing a little more. Hope you have better luck next time!
 
Ok, so I retried the recipe again with grated parm, didn't use as much and let it marinate overnight.

Verdict is: It's A Winner!

There are no leftovers and the vote is that I write this recipe down so that I can make it again. I even got a thank you for making this dinner.

my hubby will fry it in a frying pan with various spices, shred it and let it cook on low in bbq sauce for awhile (basically until all the kids are screaming they are starving LOL.) Then we cook some texas toast (basically garlic bread on thick toast. You can get it in the frozen food section) and load the bbq chicken on the texas toast. really good!!
 
last night I had chicken tenderloins and I put them in some bleu cheese dressing and montreal chicken seasoning. O.M.G! It was phenomonal!

that sounds so yummy right now!
I knew not to look in this thread when I am hungry, now I want to eat :p (only a bad thing I'm trying to lose weight LOL)
 
My mom used to make her own sort of shake-n-bake...


Choose a favorite flavor of potato chips (I generally use BBQ flavored). Put the chips on a cookie sheet, and cover with plastic wrap (or you can put them in a ziploc---make sure there's no extra air in it though). What you're going to do is whack the crap out of the chips. Just take out all of your frustrations and crush the chips into little bits. I guess you could just use the rolling pin to crumble them up, but where's the fun in that????

Moisten your chicken, coat with the crushed chips, and bake.

**If you use plain potato chips, you might need to add additional seasonings...we've never needed them w/the BBQ flavored chips though.
