Soup Recipes please!

I have discovered this week I love soup. LOVE it. I only have five recipes though and would LOVE to see your favourite!!

(I make cream of brocolli, french onion, chicken noodle, beef barley and tortilla soup...)
 
How do you do tortilla soup?

I make the Pampered Chef recipe... and it is sooooo yummy!!!

Chicken Tortilla Soup Recipe
4 (6") corn tortillas
1/2 C onion, chopped
3 boneless, skinless chicken breast halves
1 garlic clove
1/4 tsp. chili powder
1/4 tsp. ground cumin
2 cans (14.5 oz each) Chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 can (4 oz) chopped green chilies, undrained
4 tsp. fresh cilantro, snipped
2 oz reduced-fat cheddar cheese, shredded (1/2 C)
4 thick slices fresh lime (optional)

1.) Preheat oven to 400°F. Cut tortillas into 1/2" strips using Kitchen Shears. Place on flat Baking Stone . Bake 7-8 minutes or until crisp.

2.) Meanwhile, chop onion using Food Chopper. Cut chicken into 1/2" pieces using 8" Chef's Knife . Heat Generation II 4 Qt Casserole over medium-high heat. Spray with vegetable oil using Kitchen Spritzer. Add chicken; cook and stir 3 minutes. Add onion, garlic pressed with Garlic Press , chili powder and cumin. Cook and stir 2 minutes. Stir in broth, tomatoes and chilies. Bring to a boil. Reduce heat and simmer 10 minutes.

3.) Snip cilantro using Kitchen Shears . Divide tortilla strips among 4 bowls. Ladle soup over tortillas using Nylon Ladle . Shred cheese over top with Deluxe Cheese Grater . Sprinkle soup with cilantro. Garnish each bowl with lime slice to squeeze juice into soup, if desired.

Baked Potato Soup

1/4 cup butter or margarine
1/4 cup chopped onion
1/4 cup all-purpose flour
1 can (14.5 oz) chicken broth
1 12oz can Evaporated Milk
2 large or 3 medium baking potatoes, baked or microwaved
Cooked and crumbled bacon (optional)
Shredded cheddar cheese (optional)
Sliced green onions (optional)

MELT butter in large saucepan over medium heat. Add onion; cook, stirring occasionally,
or 1 to 2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk.
Scoop potato pulp from 1 potato (reserve potato skin); mash. Add pulp to broth mixture. Cook
over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining
potato skin and potato(es); add to soup. Heat through. Season with salt and ground black pepper.
Top each serving with bacon, cheese and green onions, if desired.

VARIATION: For a different twist to this recipe, omit the bacon, cheddar cheese and green onions.
Cook 2 tablespoons shredded carrot with the onion and add 1/4 teaspoon dried dill to the soup
when adding the broth. Proceed as above.

I got a recipe from a friend and tweaked it a bit --

1 lb. sausage
onion (to your liking)
1 can rotel
1 can cream of mushroom soup
1/2 block of Velveeta
1 small can mushrooms
1/4 - 1/2 cup of milk

Brown sausage w/ onion. Add rotel and soup until blended well. Add Velveeta and mushrooms. After the cheese is melted, add milk (more or less, depending on your idea of soup.)
 
I love soup too, and need some healthy recipes for my DH. So I'm keeping an eye on this thread! I have a great recipe for Black Bean Soup around here somewhere . . . gotta go dig it out.
 
Here's my recipe for Cheesy potato soup!

5 chicken bouillon cubes
5 cups water
8-10 medium potatoes
1 pint Half & Half
1 grated carrot
1 cup chopped celery
1/4 cup flour
1/4 cup milk
2 cups grated cheddar cheese
1 ham steak
1 8oz cream cheese

Put bouillon cubes in the water along with the veggies and cook until tender. While they are cooking, pan fry your ham IF you didn't buy a pre-cooked one. Combine flour and milk to make a paste and add it to the veggies. Add the ham, Half & Half, cream cheese and cheddar cheese and cook until right before it boils. Do NOT boil as this will scorch the Half & Half.
 
FRENCH ONION SOUP IS MY FAVORITE EVERRRRRRRRR!!!!!!!!

Phew, now that I got that off my chest.
I posted this in the cheese thread, but it's so tasty. Chicken noodle soup + marinara sauce + mozzarella cheese. Delish! It's like poor man's tomato soup with a lil somethin somethin extra :p
 
Can I ask what Rotel is?? I don't think I've ever seen that...

Rotel is diced tomatoes and green chiles - it's usually with the diced tomatoes and it comes in mild and hot, I believe. I've got a 4 year so I always get mild. :) :)

It's really good.

I'd love to get the cream of broccoli from you. I'm always on the lookout for a good broccoli soup.
 
This is a soup recipe that I've made before that we loved. It is super simple because it's a crockpot recipe (it's from a crockpot cookbook). The ingredients don't seem like much but the soup is so packed with flavor!

Sauerkraut-Sausage Bean Soup

3 15-oz. cans white beans (great northern beans), undrained
16-oz. can sauerkraut, drained
1 lb. link (breakfast) sausage, sliced
1/4 cup brown sugar
1/2 cup ketchup

Combine all ingredients in slow cooker, cook on high 2-3 hours.

DH is not a big soup guy (although I love it) but he loves this soup!

I LOVE this one from allrecipes, though I usually don't use as much broth because i like it thick.

Black Bean Vegetable Soup

INGREDIENTS:
1 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, minced
2 carrots, chopped
2 teaspoons chili powder
1 teaspoon ground cumin
4 cups vegetable stock

2 (15 ounce) cans black beans,
rinsed and drained
1 (8.75 ounce) can whole
kernel corn
1/4 teaspoon ground black
pepper
1 (14.5 ounce) can stewed
tomatoes
DIRECTIONS:
1. In large saucepan, heat oil over medium heat; cook onion, garlic, and carrots, stirring occasionally, for 5 minutes or until onion is softened. Add chili powder and cumin; cook, stirring, for 1 minute. Add stock, 1 can of the beans, corn, and pepper; bring to boil.
2. Meanwhile, in food processor or blender, puree together tomatoes and remaining can of beans; add to pot. Reduce heat, cover, and simmer for 10 to 15 minutes or until carrots are tender.
 
My brocolli soup is kind of a cheater soup... haha... but it's quick and easy and delicious (and my three year old who is not a fan of vegetables will down a bowl in a minute!). This is a doctored instant soup recipe! *LOL* :P

Brocolli Soup
1 pkg powdered Knorr (or other) brocolli soup mix
1 head brocolli
liquid required by the soup mix + 1 cup milk and 2 cups water
1 tsp cajun seasoning or seasoning salt
sprinkle celery salt, oregano and parsley
salt and pepper
1 1/2 cups shredded medium or old cheddar
1/2 cup shredded parmesan

Steam brocolli until tender. Let cool, and puree. (chop the head of the brocolli if you like a chunkier soup)

Whisk powdered soup mix in required liquid (usually milk and water) until simmering. Add seasoning and pureed brocolli. Heat at a simmer for 5-10 minutes. Add cheese and stir slowly until melted and combined.

That's it. It takes me about 15 minutes to make, and makes enough for about 8 servings. :) The soup package costs $1.00, and so does the brocolli, so pretty good economy, I'd say.
