Survey: Chicken Salad

I have a thing for chicken salad.

I frequent two restaurants, Einstein's Bagels and Heidi's Brooklyn Deli, solely for their chicken salad sandwiches. I also concocted my own chicken salad recipe after having some at another restaurant several years ago.

Did I mention I have a thing for chicken salad?

Soo... I wanna know how you make yours. What do you put in it? Family recipe? Any 'secret ingredients?'

Do share. My tummy thanks you. :)

ETA: I make mine using mayo, sour cream, dill, & salt 'n' pepper. Onion & celery is optional.

I use Mayo, a bit of sugar and milk as the base.
I cut up a few eggs, grape halves, walnuts and sweet gherkin pieces.
Mix it all together and eat it on dense multi grained bread.
 
I make it with roasted in the oven chicken breasts and use a french herb combo. I typically put in minced onions and mayo and then what else depends on what's available - hard boiled egg is nice, my mom likes the walnuts and halved grapes thing. To me the key is the roasted chicken.
 
Mine is pretty simple, low fat mayo, some red onion, giant capers chopped up and depending what mood I am in, sometimes I add some curry powder!
 
Mine is pretty simple and basic but the key is that everything is fresh, no dried herbs.

roasted chicken breasts
salt
pepper
garlic
green onions
parsley
and of course mayo



We have a thing for chicken salad and egg salad here and I make a batch of each ever week. :)
 
i don't have a set way to make it. there's usually chicken and mayo. i like red grapes and curry powder and perhaps a bit of red onion and celery.
 
I don't make it, because mine just never compares to my mom's. But I know she includes mayo, mustard, olives, onions, sugar, and eggs.
 
want to know one of my favorite places to get a CS sandwich that was SUCH a surprise? Well I'm gonna tell you anyway :p Arby's! First the bread is SO good with lots of nuts in it, then the salad has grapes and apples and nuts too - Y U MM Y!
 
arby's, eh? I admit it. I like Arby's.

I will also admit that I had no idea that people put eggs in chicken salad. isn't that kind of redundant bwhahahahaha j/k.
 
I make mine with the red grapes, walnuts and celery too, but usually I'm too lazy to actually cook the chicken. I buy one of the flavored rotisserie chickens from Publix and use that...makes it more yummy!
 
Honestly I use the recipe in my Betty Crocker Cookbook and it's the best I have ever eaten, HANDS DOWN!! However the trick may be that I buy chicken breast ON THE bone and grill it out to make my chicken salad. Chicken on the bone is so much tastier then boneless skinless ckicken breast!! Here is the recipe:

1 1/2 cups Chopped Cooked Chicken
1/2 cup Mayonnaise
1/4 tsp salt
1/4 tsp pepper
1 medium celery stalk, chopped
1 small onion, chopped

Makes 4 sandwiches
 
Hmm, I have never made it! I want to now! I have never had it with egg in it either! I do love egg salad so I may have to try it. The grapes I do love tho! I think I'll do the rotisserie version too!
 
I usually use the leftover rotisserie chicken meat from dinner (We get a rotisserie chicken from the grocery store every other week), so mine is white and dark meat chicken in it. I use Miracle Whip and dijon mustard. After that it depends on what sort of taste I am going for. If I want to up the savory side I'll add olives & a hard boiled egg. If I want some sweetness instead I'll add chopped grapes or grated apple and usually walnuts, plus I use less dijon.
 
Mmmmm, I love chicken salad. We have a deli/cafe here that makes the best chicken salad. So I tried to make my own to taste somewhat like their's and I've gotten pretty darn close.

First I start with chicken grilled w/ bacon wrapped around it. Actually that was kind of a fluke. I like to grill chicken wrapped w/ bacon. I had quite a bit left over one time and decided to use it for chicken salad. The smoked flavor and tiny bits of bacon make it delish!!!

I shred it up very fine. I used lots of mayo (I'm a mayo girl), some sour cream, some soft (spreadable) cream cheese, and a little finely chopped celery. No measurements for any of it, just taste!

I'm tellin' ya, it's awesome!!!
 
I don't have a recipe, but if you ever get to Boston, there's this deli - D&G Deli - that has the best chicken salad ever. Ever.
 
awww...yes. the chicken salad! me likes. i use mayo, halfed grapes, celery, chopped walnuts, finely diced onion, the chicken of course and various seasoning to taste. yuuuuuuuuuuuuummy.
 
I have my own recipe, but I learned a secret from my cousin who is the top chef in the family. Cook the chicken outside on the grill first. If you can.

I use mayo, tiny chopped up celery, salt, pepper, maybe a little red onion and/or sweet pickle chopped real tiny.
 
YUM!!! Panera Bread has good chicken salad but I get it on the whole grain bread, not the honey wheat it comes on... ugh, now I want one!!!

There is a small chain of deli's in the Atlanta are called My Friend's Place that had rocking chicken salad too on pita... it has apples and walnuts in it!!

Did I mention I hate you for bringing this up when I totally have the munchies at 1:30 am?!! :P
 
Ok I make the best CS ever. Seriously.

Recipe..
- Chicken breasts boiled in salted water..slowly, so they stay tender and juicyfied
- Sour Cream
- Sweet Vidalia Onion Dressing (that's my prize winning ingredient)
- Purple Grapes halved
- Pecans
- Pepper & Salt to taste
- Red Onion FINELY chopped and not too much..to taste

YUMM!
 
Boston Market used to have a really good CS but I don't know if they still do........Anyway I use mayo, red onion, apples (sometimes), celery, spicy brown mustard (just a little) and then I put a bit of Mrs. Dash Garlic & Herb in there....YUMMY!!!!!
