What are you making for supper??

HAHA but i warn you these are the best cinnamon buns in the world, and will not last long.


yeast mixture
(2) .25 oz. pkts. active dry yeast
1 tsp. granulated sugar
1 cup 110 degree water

dough
1 cup warm milk
2/3 cups granulated sugar
2/3 cup melted butter OR margarine
2 tsp. salt
2 eggs - slightly beaten
up to 8 cups all-purpose flour

Filling
1 1/2 cups granulated sugar
3 Tbls. ground cinnamon
1/2 cup melted marg
1 1/2 cups chopped walnuts OR pecans - optional


Icing (optional)
4 cups powdered sugar
2/3 cup melted butter OR margarine
2 tsp. vanilla extract
1 tsp. maple extract - optional, but recommended
up to 6 Tbls. hot water

In a small bowl, dissolve yeast and 1 tsp. sugar in warm water; set aside.
-In a large bowl, mix together milk, 2/3 cup sugar, 2/3 cup melted butter, salt, and eggs; add yeast mixture and 4 cups of flour to mixture; beat until smooth; stir in enough flour to form a slightly stiff dough.
-Turn dough out onto a well-floured surface and knead for 8 minutes.
-Place dough into a large greased bowl, cover, and allow to rise in a warm place until doubled in size, about 1 - 1 1/2 hours.
-Punch down dough and let rest for 5 minutes.
-Roll dough out onto a floured surface into a 15" X 20" rectangle.
-Brush 1/2 cup melted butter over dough; sprinkle cinnamon sugar evenly over dough; sprinkle nuts evenly over dough, if desired.
-Tightly roll up dough and pinch edges together to seal; cut the roll into 12 - 15 slices using dental floss or thread.
-Coat the bottom of a 13" X 9" X 2" baking pan with 1/2 cup melted butter; sprinkle 1/3 cup sugar evenly in the bottom of the pan.
-Place cinnamon roll slices close together in the prepared pan; cover pan and allow to rise in a warm place for 45 minutes.
-Bake rolls in a 350 degree oven for 25 - 30 minutes, or until golden brown.
-Stir together powdered sugar, 2/3 cup melted butter, and extracts; stir in hot water, 1 Tbls. at a time, until the glaze reaches desired spreading consistency.
-Spread prepared icing over slightly cooled rolls.
 
Italian Meatballs

Ingredients
# 1 1/2 lbs lean beef (or a mixture of beef, pork and veal, I mostly use a mixture of ground beef and pork)
# 1 large egg, slightly beaten
# 1/4 cup parmesan cheese (can use more)
# 1/2 cup breadcrumbs (can use more)
# 1-2 tablespoon fresh minced garlic (or use 1 teaspoon garlic powder or to taste)
# 1-2 teaspoon salt (or to taste, I use 2 teaspoons seasoned salt as I prefer it better than white salt)
# 1 teaspoon black pepper (or to taste)
# 1/3 cup milk (can use up to 1/2 cup milk)
# 1/2-1 teaspoon dried oregano (optional, or to taste)
# 1/4 cup chopped fresh parsley or 1-2 teaspoon dried parsley

Mix all ingredients together in a large bowl.
Drop the meatballs into casserole dish and pour pasta sauce over (homemade or canned), do not stir for at least 20 minutes or you will risk breaking the meatballs. Cook at 350 degrees F 40 minutes total should fully cook the meatballs. After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.

*NOTE* you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.
 
ooo, ooo, ooo, thanks for those bun and balls recipes!!!

WE had leftovers tonight - baked ziti from last night. I am SO in need of an easy way to plan a REAL meal (like with veggies and/or some other side). Any suggestions???? I hate thinking about dinner so like to have it all planned out ahead of time. (It doesn't help that I can't read anything in the grocery store, so I just get what I've gotten before so I am sure of what it is . . . but it gets boring!)

(01) You lost me at 'dissolve yeast.' Laura Ingalls Wilder on the prairie I am not. :p

(02) I am totally giggling at the 'thanks for the bun and balls recipes.' *lol* I'm horrible, I know.
 
We tried a new spicy peanut butter chicken & broccoli recipe that I got from one of the blogs I read... it was AWESOME! Even the kids ate it and liked it, and that is saying something in my house.

If anyone is interested, let me know!
