Give me your recipes for...

Dessert for 4

My volunteer group is providing dinner for the local fire station on 9/11. I am in charge of dessert. There are only 4 guys on the shift at a time. (Other members will cover 9/12 & 9/13 so we cover all the guys there.)

I need an easy idea for something I can make that doesn't make a lot. We've done this for 9 years now and usually the guys are watching what they eat so we try not to take too much.
 
Why not a quick bread or pound cake with some fruit and creme fraiche with vanilla? That way- they can eat a little, save the rest, share it amongst the guys, and it's not a lot of work on your end.
 
Marla - We have that all the time...didn't think about 1/2ing it.

My family calls it Chocolate Yummy and my inlaws call it Chocolate Delight so we always make jokes about who is right. I'll have to let them know there are other names too.
 
Can you get ready made meringue nests? Have those on a plate, dishes of fresh fruit (rasberries, strawberries, grapes etc), a bottle of coulis and jug of cream, then folks just assemble themselves into a dish. Can't get quicker and it's low fat (more so if they don't add the cream!). I do this fairly frequently as it is so easy and well received, although if serving at a party I will do a whipped chantilly cream.
