What's For Dinner?

So what y'all having for dindin this week? :p

Monday: was Turkey breast cutlets in gravy with stove top turkey stuffing, creamed corn, green beans and fried squash, zucchini & onion goolosh.
Tuesday: Loaded Chicken-Bacon pot pie (and it is to die for) the best recipe I have found yet along with some cornbread or french bread.
Wednesday: T-Bone steaks with baked potatoes/baked sweet potatoes or mashed garlic Parmesan red potatoes/
Thursday: All white meat Turkey hot dogs with slaw, chili, onions, cheese, mustard and ketchup.
Friday: Eat out night.
Saturday: BBQ boneless Beef short ribs with some undecided side.
Sunday: Who knows, yet :D

I recently went Gluten and Dairy Free so I am having to experiment with new recipes because a lot of my old standbys were heavy on the dairy and gluten. But so far so good.
 
I made the two meals I had planned already on Sunday & Monday night. So, I will kind of wing it from here on.

Tonight is probably something simple that I can scrape together from my fridge & pantry... or leftovers? Tomorrow we always eat out for dinner, then Thursday I will probably do a stir fry with some chicken & peppers. Friday is salad & pizza night (I have stuff on hand to make them homemade). Saturday, eat out. Sunday... groceries and start over again.
 
Liz - can you share your homemade HH recipe? I would love to try it.

Tonight I'll be using some hamburger I just got on sale and for tomorrow I have some chicken in the freezer to thaw out.

Tonight I'll make a hamburger casserole. No recipe, just dump in cooked noodles, cooked hamburger, onion, peppers, mushrooms, add in diced tomatoes and tomato paste with a bit of beef broth. Add some garlic, Italian spice, red pepper flakes, salt & pepper and bake for 30 minutes at 350.
 
I just put veggie soup in the crockpot for dinner tonight. Last night we had mac-n-cheese with ham steaks (we have mac&cheese at least once a week because I have a vegetarian college age son and everyone eats it). Tomorrow night will probably be a frozen casserole. I have something for Thursday, but can't remember what I bought.
 
This week's meal plan includes homemade sloppy joes, tacos, pork chops + mashed potatoes, ravioli, crockpot chicken, and Friday night pizza.

Exciting, I know. ;)

I have two. One that is Gluten Free and Dairy Free and one that is not. Both have been taste approved by my husband who is pretty picky.

1. Gluten Free/Dairy Free: Homemade Hamburger Helper

2. Normal: Homemade Beef Stroganoff for this one I don't use mushrooms because DH hates them and I make a quick cream of something base from scratch with this recipe.
 
Here's what's on the schedule. We ate out a lot last week because of some unexpected and urgent errands, so I planned super-easy week night faves to make sure we eat at home:

Monday - Pan-fried chicken, potato-carrot hash, salad
Tuesday - Black bean and goat cheese quesadillas with cilantro-lime rice
Wednesday - Egg-fried rice, egg rolls
Thursday - Pasta with marina sauce
Friday - Homemade pizza
 
We've been doing it easy, one day at a time dinners lately since cooking is like the LAST thing that I want to do.

Tonight we had oven fried pork chops, mac n' cheese (neon orange from a box, lol), and green beans. Very country. Very unhealthy.
 
We very rarely plan our meals out more than 3 days in advance.

Yesterday DH made jambalaya and today he's making thai chicken curry. We've talked about homemade mac and cheese with ham and flank steak for later in the week.
 
Tonight I ended up making breakfast for dinner. bacon, sausage, scrambled eggs, biscuits, gravy, and caramelized onions. I eat mostly bacon and then a few pieces of toast. But hubby loved it.
