What's for dinner ?

After much whining that we are eating the same things too frequently... I am making enchiladas tonight to mix it up :p sorry my amazing meat roasts and roasted chickens got boring :p lol
 
We made our own paninis tonight. Cooked up some boneless chicken breast with some garlic, oregano, and onion powder and then sliced it up and cooked up some onions until they were soft. Then layered pesto, roasted red peppers, oil packed sundried tomatoes, basil leaves, the onions, and the chicken into a panini - easy peasy and soooo good!
 
I made sassy chicken (roasted chicken in a sweet Thai chili sauce), roasted sweet potatoes and sweet onion, and a side garden salad. Yummy! Kids loved the chicken so I was happy.
 
I used those crescent rolls in a tube thing and put in some pizza sauce and cheese and baked them up. Kiddo loved it. Figured it was fun for a kid friendly meal. I also ate pineapple and he also had strawberries, jello and yogurt.
 
Laziness with a side of "it's snowy and dreary." Kids had chicken nuggets and fries with carrots and fruit. I had Lean Cuisine mushroom ravioli, and DH had frozen pizza. I'll do better tomorrow!

We had inside out stuffed peppers and corn bread.

Just hamburger meat, diced bell peppers, onions, rice and tomato sauce.
 
I'm sick... So had a chicken soup. Hubby switched radio shifts from morning to afternoon, so kiddo got to go along, since it was after church. Then they were going to FIL's radio show tonight... And between the hour drive, they at at Buffalo Wild Wings, kiddos favorite place... A wall is TVs playing nothing but sports and trivia... Haha

pretty sure one kid had pizza rolls and the other two had bagel bites.... parenting award of the year right here... but tonight is a IDGAF night!
 
Poor Man's Lasagna = mac & cheese mixed with spaghetti sauce & ground beef, topped with cheese & baked. SOOOOOO easy & yummy! It hit the spot. :) And green beans with it.
 
I had leftover lasagna that my mom brought me yesterday. DH hasn't eaten yet.

We are sans kids until Tuesday, so no cooking for me until then! Woot woot!
 
I made bbq chicken, zucchini, potatoes, and home made biscuits. I put everything, but the biscuits in tin foil. Then threw it in the oven. My husband peeled everything :) The biscuits I made so that I can put what is left up for the rest of the week. I usually only cook a big meal on Sunday. The rest of the time it's easy things.
 
Tonight was whatever because my crockpot meal wasn't ready in time. Tomorrow shall be pulled chicken with BBQ sauce

I have a Chicken noodle soup cooking in my Crockpot for when we get home fr.o.m. Work/preschool tonight.

John has had done our grocery shopping for the past 3 weeks and unfortunately that means this is the 2nd/3rd week in a row we're having some of these dinners. Plus, you can tell what he was in the mood for when he went shopping:

yesterday - burritos, mac n cheese, corn
today - spaghetti with meatballs
tomorrow - pizza
Wednesday - uh, I don't know, I didn't look in the church bulletin and we eat there on Wednesdays.... lol
Thursday - taquitos, rice, beans, corn
 
Yesterday was breakfast.... :)

Tonight will be left over chicken made into Quesadillas, with roasted zucchini/squash.
Tomorrow will be baked chicken with French Fried Onion... roasted Brocolli, and maybe rolls.
I'll have to see what's in the freezer, lol!
 
Last night was grilled BBQ chicken with baked tater tots and corn. Tonight is burgers, either fries or tots and baked beans. Tuesday will likely be some sort of chicken tossed in the crockpot.
 
I just made some sweet and sour chicken and rice for fried rice as a pre-prep since we have baseball AND basketball tonight. Now all I have to do is heat it up tonight and I'm golden!

What's your recipe for the sweet and sour? That's one of hubby's favorites but I've never tried to make it myself.

I love my crockpot for practice nights. Otherwise we end up eating frozen pizza or something because I'm too lazy after we get home so late. :P

lol we have mexican food all the time, so tonight I am mixing it up with
hamburgers....
