What is/was for dinner?

Some of you are probably done with dinner, so what did you have?

It's always a struggle around here with picky eaters, but maybe someone's meal will inspire me. ;)
 
Pasta with Zucchini, Tomatoes and Creamy Lemon-Yogurt Sauce


I've made this a few times and my girls LOVE it, and....I've got a ton of tomatoes and zucchini from the garden I need to use.

Sausage, Peppers, Onions & Potato Bake
 
according to my menu board...
breakfast- eggs, sausage, toast, and hash browns.
the boy doesn't get out of work until 8. so it's a late dinner for us tonight. and i have no idea when my roommate will be home. so i dunno whether to cook for her as well. so yeah. when we do eat, it'll be breakfast for dinner. since there's really nothing else to cook.
 
We had "mom's" tacos... it's my hubby's mother's recipe - and one of the few things he remembers her making (she passed when he was 10)... it's basically browned hamburger and corn tortillia's (lightly fried in oil) and topped with ketchup, onions, and cheese... when we have tacos, this is what hubby always asks for... ;)
 
We had homemade Mac and Cheese. Nothin fancy, just white sauce with sharp cheddar melted in. I didn't even bake it. Salad and cherries on the side, and milkshakes for dessert.
 
LOL - mine probably isn't for picky eaters, but I'll tell ya anyway

Thai red curried vegetables with chick peas and cashews :D Spicy, no meat, and lots of vegetables like bamboo shoots, broccoli, yellow peppers, and onions.
 
Made these for dinner. This is the second time I have made them and it is a family favorite now! So yummy, pretty inexpensive, and quick n easy :)

 
I cooked a big ol supper yesterday, baked chicken, brussel sprouts, corn on the cob and no one ate except me. The rest of my family "wasn't hungry for chicken." They better be tonight because it is leftovers over here! :D

Marie, can you, please, just start cooking for me? You make exactly what I would want to eat, if I took the time to make it.
 
we had 'hashbrown casserole.'
i need to go shopping but can't go until thursday so i'm being inventive. it was hashbrowns, browned hamburger, onion, a can of corn, cream of mushroom soup, a can of diced tomatoes, salt, pepper, and greek seasoning. was a hit!

I am addicted to curry lately, and warm Indian spices like garam masala. This sounds absolutely fantastic! It would be gobbled up here, aside from the spicy factor... if it's spicy my kids won't eat it.
 
I ended up making taco meat and the fixings and then we all did our own tortillas/shell things. We love those raw tortillas that you cook up - sooooo much better than store-bought flour tortillas.

LOL Mari - Move on up here with Darcy and I'll cook every night - I love to cook and thank goodness Cheyanne is so not picky at all and will eat just about anything :D

We love any kind of curry in this household - last night's was actually not very spicy at all - it had a mild heat to it. We love spicy but not so spicy that it burns your taste buds off! :D
