The Sacrilege: Non-Egg Potato Salad Recipes

We also have a family BBQ and a friend BBQ this weekend that I need to bring a side to. I'm planning on just making double the recipe of whatever I decide on 'cause I'm smart like that (sometimes). :D

However, I do NOT like traditional potato salad. I don't like eggs, and my mom can't eat them, anyways (and will be at the family BBQ).

I have a red potato salad recipe that I'm thinking of trying but do any of y'all have any delicious non-egg potato salad recipes in your cooking repertoire that you'd care to share with me? :wub:
 
I almost exclusively eat the kind with eggs. :p Sorry, I'm no help. I <3 egg in potato salad!!!
 
Yum... German Potato Salad, I use a similar recipe to Lynnette's... please, do not serve it cold. :)
 
I'm right there with you! I can't STAND eggs, especially rotten boiled! My mom is straight from Germany so we always had German potato salad growing up. I also make a regular mayo-based potato salad and just leave the nasty things out but I do add more vinegar to my mayo, a little dijon, salt, pepper, and onion.
 
Yes! It's meant to be warm. I think the cold potato aspect is what I dislike about regular potato salad.

We went to Germanfest last fall and they served the german potato salad cold... I couldn't eat it... nasty! haha
 
I don't always put eggs in mine. I put in chopped celery and green onion, then add in mayo & salad dressing mixed in equal parts, dry mustard, salt and pepper, a bit of dill and a few good shakes of Old Bay Seasoning.
 
I would have never thought of potato salad without eggs. My mama has always made the BEST potato salad. People who didn't like it would try it and get converted. :)
 
This is going to be no help to you AT ALL, but my husband made a deviled egg potato salad last weekend and it was AMAZEBALLS! I recommend it to all you egg lovers out there :D
 
German style is my favorite but I like traditional too. I make a really good blue cheese potato salad, it has a bit of rice wine vinegar with bacon and scallions.
 
He's already sleeping, but I'll find out where he got the recipe from in the a.m. Seriously, even the girls loved it and they hate all things potato :D
 
I just wanted to throw it out there that Stonemill Kitchens Red Potato Salad (I buy it at Costco) is amazing. It's just like homemade - except without all of the time and fuss.
 
Ok, here it is.

3 1/2 lb potatoes peeled and cut to 1 inch pieces
Kosher salt
Freshly ground black pepper
1 cup mayonnaise
3 tbsp yellow mustard
6 large hard boiled eggs peeled and chopped
3 celery ribs thinly sliced, 1/4 cup chopped celery leaves
6 scallions thinly sliced
1/3 cup of chopped fresh flat leaf parsley
1 4 oz jar of diced pimentos drained
Sweet paprika for garnish

Place potatoes in medium saucepan, cover with cold salted water. Simmer until tender then drain
Combine mayo and mustard in a bowl
Add potatoes, eggs, celery and leaves, scallions, parsley and pimentos
Toss to combine
Season with salt and pepper
Garnish with paprika

So easy and so tasty! It was a nice change from the mustard potato salad I usually eat.
