Make ahead Freezer food?

Hey everyone hubby and I are going on a 2 week trip w/o kids at the end of the month. My in laws will be watching the kiddlets but I want to make things as easy as possible for them. I was thinking if dinners were already ready and just needed to be popped into the oven that this might really help them.

Does anyone have some AWESOME Easy Make ahead freezer dinners they would like to share the recipes of?

Currently I am thinking a Lasagna and this Chicken Tetrazzini Recipe

It's gotta make enough for 7 people to feed. Looking forward to see what you gals have to share. Thanks everyone.
 
Have a wonderful time! I haven't tried too many freezer meals, but I know meatloaf freezes well. I always make extra and freeze some as individual servings when we have it.
 
Money Saving Mom just did a series on freezer cooking.

ETA: The easiest thing to do is to double up on a recipe your kids like eating now. Eat one this week. Freeze the other for when your parents are taking care of them. That way the kids have meals they like and are used to eating.
 
I just started with Once A Month Mom last week: http://onceamonthmom.com/ They have some of their own great recipes, but also create 'freezer versions' of the latest and greatest recipes that are appearing on the web. One of the things I like about her menus is that you can download excel files and then adjust the number of people you are cooking for and it does the math on the recipes. So adjusting for 7 people would be snap.

Sorry I can't recommend anything specific, I cook the vegetarian stuff, which I'm guessing your not really looking for. Some of my stand-by's that you might have your own recipes for are:

Chili - make a big pot of his favorite chili and cornbread muffins (this one you would bake ahead and freeze. Heat & go!

Twice Baked Potatoes: bake potatoes, scoop out, make the filling, stuff, bake. Cool, then freeze. To eat just heat these up. These would be great served with any of your favorite marinated chicken dishes. (freeze chicken with marinate, thaw & then cook in oven or grill)

Burritoes: make all the ingredients, assemble and then freeze. Heat & go.

I freeze frittattas (before cooking). Prepare all the vegetables, cheese, eggs. Mix it all up and then freeze the slurry. To eat, thaw and then bake in the oven. Nice with hashbrowns!

I think you lasagne idea is perfect!

I have always wanted to do this and even have a board on pinterest for it. I just haven't done it yet. I need to have a kid free saturday with a girlfriend so we can cook together all day and then package stuff up. That is my idea of a good time! :)
 
Thanks for the references ladies I will totally check them all out and make a list of the things I can cook that my kids will eat. It would be easier if it was just my kids eating but my in laws don't like a lot of the foods that we eat normally so I have to make some more milder foods for them. LOL Love the meatloaf idea too never thought about freezing one.
